Cooking for one is tough. I had four nights alone recently. Went to mom's to visit on one of them, another night I went to a bar I frequent, the other two just I heated up frozen chicken pot pies and made a salad.

A big trip once a week. (Ordered online and delivered) But I might pop in 2X during the week for more fruit/veggies, fresh bread or chocolate.

I have an ever-expanding vegetable & herb garden that is my source of backyard pride and happiness. The soil where I live is shite, so I use several raised beds that have, over the years, become very rich with loam and composte. Gardening is a passion.

Almost every meal, I would say. They’re always fresh veggies. The only canned items would be beans, hearts of palm, artichoke hearts and the like. Lots of salads.
My fave? Roasted cauliflower & broccoli with garlic, peppers and pine nuts. Maybe add sultanas.
