Examine the critter. If the tail sticks straight out- he was dead before he was cooked. Toss him away. He is a waste and if you eat him you will discover a pastey consistancy. Won't kill you, but there is much better!
I am right handed so
Grasp the fucker with your left hand. With your right hand, separate the tail from the head. Don't rip it like an east texas redneck- just break it an pull it away. If you do it this way, you will find your bounty much more plentiful than the other way.
Like a shrimp or lobster, the crawfish's tail is armored with rings of protective shell. With your left thumb, pry away the first ring. Put the tail to your mouth and with your right hand apply pressure. The meat will slip right out.
Now, take the head in your left hand. You should notice a hollow from where you seperated the tail. With your right forefinger, scoop up the yellow stuff you see in there. That is the fat- and that is the flavor.
Some people boil crawfish and put butter on them, claiming it makes them easier to peel. This is bullshit. The butter is a nice flavor enhancer, but doesn't make them easier to peel.
Want a good eat? Buy some lobster and boil them like crawfish.
