Hmm... Music comes to mind first - I nearly come when I hear someone like Florence and the Machine, but sometimes a guys voice will do it too: it's the emotional whoosh that sets up some kinda sympathetic harmonic in me.

If you ride with a dressage seat (long stirrups) it can happen occasionally. I had a lesson on a dressage schoolmaster once and every time we went into canter, the "absorption" movements I had to make - kind of just minimally rocking my pelvis back and forth in the saddle - to keep in rhythm with the horse started to have an effect.
