The Great Dinner Throwdown

I had cheese on toast. Because I didn't get in until 8.30, and was in my cave until 9.

It doesn't deserve a picture.

...but it was organic sourdough, and a delicious smoked cheddar

Aubrey would approve.

After your mention, I've been doing Misen research. I did opt for some new MadeIn pieces. The 2 and 4qt sauce pans I got a month ago are pretty nice. They cook very very even and retain wonderfully. I ordered a 12in skillet that just got here the other day. Haven't gotten a chance to use it yet. I liked the lifetime warranty, something the misen seemed to be missing.

I'm actually cooking some homey creamy chicken and noodles tonight. Using the new Staub for the first time.

I would call our olive garden anything but consistent. It's what happens when High-school kids and their friends run a fucking restaurant.

Was it the stainless MadeIn? Or nonstick? I'd of prolly gone with their bluedsteel carbon skillets instead of the carbon Misen skillets. The Misen carbons are nice, but I like the blue color.

OG should be consistent. I always try to not eat in chains. It's been so long that I cannot remember the last chain restaurant I got food from.

I did get the Made In stainless. Well, 5 ply. They have carbon stuff too, but I waited on that. I wanted to try a few things before I jumped in. I have a rotating brand of inexpensive non stick that I love. $40 for the largest pan and they last a few years with heavy use. When they've lived their life, they get replaced. My only fear is the company will discontinue the brand.

I needed a new non-stick pan for the cabin this winter. Got a 12" Blue Diamond skillet from Amazon for $20 delivered. I tested it at home before taking it to the cabin. Consequently, I replaced my aging non-stick at home with the same brand. My kid with the Culinary Degree was at the cabin for a week at spring break, loved the pan, and sent for one as soon as he returned home. He had just purchased the OXO pan that got rave reviews around Christmas and was astounded at the non-stick and ease of clean-up of the BD pan.

Yeah, whatever works! I've gone with the T-Fal pro series for years. They are getting harder and harder to find available. Plus, since the last order, I think they've downgraded the pro series. Disappointing. I did pick up a few All-Clad cheapie non-stick pans. They work well, but have already started to wear. Really though, non stick pans are never as non stick as the last use anyway.

The BD is an enamel coated pan right?

I guess it's a ceramic coating. They say diamond infused. If it lasts a year, hurrah.

It's not lasting. It was awesome when new, but after a couple months, I'll not buy another one of these pans.

Funny, my father in law bought a whole set of the blue diamonds. He hates them. I think he got a good two weeks out of his. Of course, he likes to use them on the out side grill burner.

Seriously, check out the All-Clad, cheapie, non sticks. Ive been using mine for at least 5 months and they are still doing well. They showed some wear at first, but they seem to be holding up!

Thanks.

I don't use high heat on them like you can with a side burner, but the other person in the house does.

I am bathing the country-style spareribs (which are not ribs of any sort) in smoke for a while. Then, the grill will be turned up for a reverse sear.

I got pissed and threw the pan in the dishwasher.

Damn thing works like a champ, now.

We had the Hate Chicken. No photos were taken to minimize the proof we ate it.
