the Mermaid is doing great! She's lost 22+ lbs since the surgery and is feeling great!! I can't wait until March 15th when I get back up there for 6 days this time!! WHOO HOO!!

Oh Sweetie, I have been a basket case since I got back after V-day. Its a good thing that I have been doing my job for quite a while and can do it on autopilot and still do my usual fantastic job!! Actually if you havent noticed, I dont get on Lit too much anymore!! LOL
Kinda been busy!! But no, she doesnt get on very often anymore. she doesnt have time too either!! LOL

"Bourbon" Chicken

Hi folks!!
Just tried this recipe the other night and it was a huge hit, so I thought I'd share!!

"Bourbon" Chicken
8 Portions
3 oz servings

Ingredients
3 lb raw (boneless) chicken meat (thigh meat)
4 fl oz soy sauce
3/4 cup (packed) brown sugar
1/2 tsp garlic powder (more to taste)
1 tsp ground ginger
1/4 cup chopped onions
6 oz chicken stock (broth)
1/2 cup cooking sherry (or bourbon if you prefer)
2 Tbsp molasses

Directions
1.Cut chicken into 1/2 inch strips
2. Mix all other ingredients for marinade and pout over chicken. Marinate over night.
3. (option 1) Lay out in a single layer in a baking pan. Bake at 325F degrees in a standard oven (275F degrees in confection oven) Basting frequently for 1 hour or until browned.
(option 2) Put all chicken and marinate in crock pot, cook on high until chicken is cooked (about 1 hour) and then cook on low until ready to serve. Add water as needed to insure that you have plenty of juice.

You can add molasses, brown sugar and cooking sherry (bourbon) to taste. Or just drink the bourbon while you are cooking and you won't care how it tastes!! ;-p

Serve over white or fried rice.

Use the cooking sherry, it works great and just gives it a good kick!! All the booze cooks out anyway!!
It really turned out great. The Mermaid took some to work yesterday for their office luncheona nd it was a huge hit!!!
