Whiskey Sour.

The whiskey sour in my comfy chair of cocktails. I am never not in the mood for this.

2 oz whiskey. I love using Redbreast Irish Whiskey for this, though someone I respect greatly thinks it is too fine a dram for a cocktail. (And I love it neat as well.) My other go to is a nice spicy rye, like a Crater Lake Reserve.

3/4 oz fresh squeezed lemon juice. Only fresh squeezed is good enough.

1/2 oz simple syrup. Make your own. For brown liquor, use either brown sugar or, if you have it, Demerara sugar. For regular simple sugar, a 1:1 ratio : boil a cup of water, add a cup of sugar, and mix until it is dissolved. Cool. You can make a rich brown sugar syrup with 2 parts sugar to one part water. You will thank me.

1 egg white. Optional, but it really gives a full-bodied feel to the drink.

Add all ingredients to your shaker and shake for 30 seconds without ice. This is called a Dry Shake. It aerates the egg while mixing all the ingredients together. Then add fresh ice and shake again for at least 20 seconds longer. Strain into a coup (or whatever the hell glass you want. You can even pour it in a rocks glass over ice, not that I would. But the sour is a forgiving drink.)

I do not usually garnish these, but three or four drops of Angostura bitters would not be remiss.
