Because it's integral to the pizza. Not optional like on a burger.
Also, if I stop thinking of it as congealed lumps of chunky milk and start thinking of it as Elmer's glue that's necessary to keep the toppings on, it becomes just palatable enough.

Except that I was picking up McDonald's for lunch and the Big Macs come with cheese as the default. You tell them "no cheese" and it's a coin flip whether they listen or not. Shoulda just gone with nuggets.
