Apparently there are a lot of alternatives now.

Question for the masses: if it would help the environment (like reverse the effects of climate change) and allow us to only ethically source meat on a smaller scale… would you switch to a diet of eating lab-engineered meat-alternatives? Not 100% of the time but just add it to your diet.

Well this got serious - but in short - yes.

I would consider it, would have to do research into how and with what it was made first.

No especially not now that we are getting results back on how everything in the lab engineered meat affects the body. However, I am all for ethical practice in all industries.
