Well it's time. One of those hard, complicated questions I've been hesitant to ask for so long. I know this will be devisive. I know it will cause fights and hard feelings. Skeletons will come out of closets... but I think it's important to get out there.
If you can only have one cheese for the rest of your life, what cheese will you pick?

I'm sorry, it was easier to pick the person I'll spend the rest of my life with.

But...POSSIBLY Red Hawk from Cowgirl Creamery. It's soft and stinky. That, or Oma from Jasper Hill Farm.

Soft? None I'd pick as really amazing for many purposes.

...the pure deliciousness of a room temp robiola or taleggio? soft, stinky and ripe, delicious by itself or on a baguette with maybe a sliced green apple and some arugula...and honey?

That bit about my being veggie... I'm sure good ones exist, but I haven't had them/don't yet know where to get them.
 
I couldn't live without pizza, so for me it's kinda boring but still delicious -- fresh mozzarella

Manchego, definitely.

Great for entertaining of all sorts, especially picnics, which also involves grapes, bread, wine, salami, kisses, sunshine, crackers, a cool breeze, under a tree, with my sexy girl, birdsong, the sound of waves on the seashore. Makes for a perfect day.

Get this cheese! I know you'll agree.

Mozzarella might not be the spectacular "best" bit of cheese you've ever had, but it's not replaceable for so many things

I would have to say "Cheddar", not because I like it over my favorites like Provolone or Bleu, but because Chedder has the most Varieties available, so though I may be stuck with "Just One Cheese", it comes in White, yellow, Mild, Medium, Sharp, Extra Sharp, Jalapeno, Bacon, EZ, Nacho etc etc etc
 
I think I'll have to go with mozzarella simply because I would NOT be able to go the rest of my life without decent pizza. Plus, it does work for a lot of other dishes as well. Though I would miss my beloved smoked Gouda dearly. Cheddar I'm not so worried about, there are plenty of cheddar FLAVORED things that I could cheat with. Always look for a loophole my friends.
 
Always and Forever --> Parmigiano Reggiano DOP (remember the last acronym since it makes ALL the difference of the world - advice from Italy ;) )

After much soul searching and deliberation, :D I would choose Fontina Val D’Aosta. A bit milder than Talleggio, but still keeping those nutty and tangy notes. Melts well, so an option for pizza. Compliments a variety of ingredients and good on its own as well.

but a life without grana padano in it is no life at all.

There is a particular English gentleman I like talking to on the phone quite often and when the line connects, he will say "__insert real name here__ are you there?" And when I say, I'm here! He replies, "Well... thank God for that."

And that is the single most British, sweet and hilarious sentence to me. :heart:
