Thank you :heart: I thought I was ordering them from Amazon.co.uk but it was Amazon.com so they are shipping from the States, which is silly - but they'll be here next week. I do not bake pies for myself so I will be giving these pie tins (with pies and attached recipes) as gifts. My hope is that they can make the pies for themselves in future and with the pie tins, won't run into some of the problems I had.
 
The ferryman thing got me thinking. Even though I'm not of Norse decent, a viking funeral would be pretty epic.

Whatever part of my brain, that voices the longings of my taste buds, and the memory of last treats, are not on the same page.

It only remembers the toasted flavor of the pecans, the smooth texture of the filling, and the tenderness of the bottom envelope,and the crisp edge of the pastry.
 
Fucking UPS delivered my package to the wrong address. I'm not sure WHAT address, or who the person who signed for it is.

Tracking Christmas package delivery is great for the most part except when the delivery is scheduled two days away and is delivered two days early when I'm not at home giving some sticky fingered bastard of a thief an opportunity to steal a present. Gotta be a special place in hell for people so greedy...grrr!
 
Ah! I was rather curious to learn what the tonne mail service was!

I would love to see what your recipe is. I'm happy with the one I've got (using only egg yolks, and including heavy cream). I'm just not confident about the ingredient substitutions. That said, it's the depth and texture of the pie I'm more concerned with right now. I hope the yolks and cream will lighten it up. Last year's attempt I had the ingredients shipped over from home - but cooking it in the wrong tin ruined it. The Danes don't do pies and so they do not have proper pie tins. They do tarts, but those dishes are much wider, have straight sides and are twice as shallow. Pie was definitely edible, but it was condensed and too sweet.

Tink, Google slab pies. You'll get more use out of your bakeware then
