Try pomegranate seeds next time. Oh, so juicy ... especially the way they pop in your mouth when you bite down on them.

Now I know what I want for breakfast in bed next weekend when my sweetie in town. That and room service. He booked a night booked at a pretty swanky hotel that's a lot closer to the airport than my place. I wouldn't be surprised if we have room service for dinner the day he comes in, too. ;)

I've been trying to steal a recipe for lemon ricotta pancakes from a couple that owns a small restaurant nearby. They're light as clouds with lemon rind in the batter and topped with lemon curd and blueberries.

My lunch/dinner today.

Meatballs and my sauce. As George Takei would say...Oh my.

Here's the recipe.

Meatballs
Ingredients:
• ½ cup bread crumbs
• ½ cup parmesan cheese
• 1 TBSP dried oregano
• 1 TBSP chopped fresh curly parsley
• 1 TBSP chopped fresh basil
• 1 TBSP kosher salt
• 1 TBSP pepper
• 3 garlic cloves minced
• 2 pounds ground pork
• 2 pounds ground beef
• 4 eggs
• ½ cup milk
• ½ cup warm water
Method:
1. In a flat mixing bowl mix the bread crumbs, parmesan, oregano, basil, salt, pepper and garlic.
2. Add the meat and blend with the dry ingredients.
3. Beat the eggs and add them to them to the mix.
4. Add the milk and water and mix well.
5. Spray a 9X13 pan with olive oil.
6. Form the meatballs into a little larger than baseball sized balls and place them into the pan. Makes about 12 big meatballs.
7. Cover with tin-foil and bake at 350 degrees for an hour and 10 minutes.
8. Serve with Traditional Pasta sauce!
 
Am going home to fire up the crock pot and try my hand at White Bean Chicken Chili. Is not exactly a sexy meal, but I'll post later if it's any good. It's 35F here right now, perfect weather for slow cooked comfort food. Mmmm....and cuddling. :)

Am going home to fire up the crock pot and try my hand at White Bean Chicken Chili. Is not exactly a sexy meal, but I'll post later if it's any good. It's 35F here right now, perfect weather for slow cooked comfort food. Mmmm....and cuddling. :)

35F? Damn. That's not perfect weather for anything.
