What about if you shred the ginger into tiny pieces beforehand?

Add it right at the start of the maceration phase?

I make rhubarb-ginger jam every year. I grate the ginger finely and it works just fine, it isn't tough or unpleasant. Then again, rhubarb in itself already is kind of "stringy", so the fibers of ginger don't particularly stand out if there are some.

But my point was, if you just want the taste and don't necessarily want chunks of ginger in it, you can grate it. For chunks of ginger, even small ones, you really have to boil it for a long time like Iris said. The boiling time also varies randomly, in my experience. Sometimes it'd get soft in only 45 minutes, sometimes it would take hours even if the chunks were the same size.

Seeing as your world isn't that far from me. ;)

Well since tomorrow's pork and sauerkraut is already made I an throwing together a pot of halibut chowder
 
There is a ginger paste available here in most middle eastern markets. Ginger pear is sounding more and more yummy...

I just nipped into the shops on the way home and picked up some comice pears and some more caster sugar. ;)

Now I'll just patiently wait for some time in the kitchen to have a go.

My only issue is that they seem to want to go with 1 cup of fruit with one cup of sugar.... That seems a bit much???
 
Scrambled eggs in goose fat. Possibly not the most imaginative use for the "gold standard" of rendered fat, but quite tasty. :)
 
Yummies to be eaten tomorrow.

I spent a good portion of my day making this. I didn't have a lot of what I needed to make traditional osechi so I took inventory and made a lovely selection of foods.

Last night I made guacamole, nachos and bruschetta. I do love living on appetizers one day a year, but I need some real food today!

Slow roasted pork shoulder cooked with onions and carrots with Roast potatoes, broccoli and sweetcorn on the side.

The rest of the joint will be used in a risotto tomorrow... If I can find the risotto rice I know we SHOULD have! :rolleyes:

got a lovely little joint of loin pork for roasting over the weekend.

My oh-so-traditional children decided that we HAD to have pork & sauerkraut after all. With garlic mashed potatoes and they're in charge. After the morning we had, I'm all for it. (Master's had some breathing issues so we went to the ER to rule out really scary stuff. It worked!)

You would be amazed at what I can do with food. And I swear crumbs get everywhere!

Never had garlic mashed potatoes. It's usually mint or carrots or chives... Or a combination of all three. :D

My mom's bff grew up Mennonite and she's got a wonderful recipe that includes potatoes and apples. Mouthwatering!

For supper tonight, I made my kids an old standby comfort food from my childhood that will probably sound nasty to anybody who didn't grow up with it--creamed tuna on toast.
