Just made the most amazing cream cheese stuffed mushrooms with garlic, onion, celery, balsamic vinegar and a little cayenne ... WOW! Then took the leftover filling and put it on some romaine with braised beef fillet ...
I think I had a mini orgasm. It was the best thing I've made in YEARS!

I have made keto strawberry chia jam to go with coconut chia pudding for desert. I'm a happy camper. I cant wait for the next work potluck! I'm bringing THAT!

I'm making salmon soup using the crawfish stock I made last fall as base. Served with bread I baked this morning that turned out really lovely. I'm hungry already!
 
Veggie lasagna. The vegetables are in the oven getting all roasty, toasty delicious and then I'll lasagna them with cheese and tomato sauce for even more goodness. So unhealthy, yet so exactly what I need right now.

I'm having cereal tonight to make up for today's carb blowout thanks to a yummy variety of mini quiches at a baby shower.

Today Thai-esque chicken and veggies thing. The Thai-esqueness comes from using Thai curry paste to season the chicken, because I made some paste on Thursday and now have to use it up. :rolleyes:

Tomorrow mushroom risotto with chantarelles, black chantarelles and porcini. I still have some mushrooms left that I picked two years ago, so I have to use them up as well. I've been eating a lot of mushroom dishes lately as a result. I still have plenty left from last year's bounty, too.

The mini blt appetizers were a hit but they will be one-hit wonders. What a pain in the ass to put together! Although they might be fit into small cups with shredded lettuce instead.

The strawberry caprese were great. Easy but messy to make and very yummy. I had to buy 4 boxes of strawberries to get a sufficient amount of medium sized, ripe berries. :mad::mad::mad:

Now what to do with the left over monster sized berries? Tough to come up with a low carb dessert with strawberries.
 
Beet and barley balls, roasted parsnip with black sesame seeds, and salad with spinach, carrot and more black sesame seeds.

So basically everything I could scrounge up in the kitchen thrown together. It was really tasty.
 
Vietnamese inspired noodle salad with ribeye. The dressing turned out really good, I was happy.

I can honestly say I've never seen any balls on beets or barley. Do they taste similar to mountain oysters? Do you fry or roast them?

They're really nothing fancy or special, just something I once concocted in my head and had to try. They're okay. I don't use any recipe, it always varies a little what I add to it. Here's how I did it the last time.

Grate beet
Add sauted onion and garlic, chili if you want, boiled pearl barley and black beans mix everything together
Add herbs, spices, seasoning, balsamic and such to your taste
Ball 'em up and cook in the oven or on a pan

You can add egg if you need help to keep it all ball shaped. If you add beans, I find it best to squish them up, but not all the way into paste. Use a bit of force when you shape the balls because otherwise they can fall apart pretty easily.

Using sweet potato instead of beet is really good, too. The barley is not a necessity, they work well just with beet/bean or sweet potato/bean versions too.
