What's cookin', good lookin'? Part II

I really miss having fruit on this low carb diet and was just researching grapes since I used to eat them every morning.

I've discovered why I should throw out the grapes and just drink Red wine instead.

"Red grapes contain higher numbers of antioxidants and these antioxidants remain present even after fermentation, which is why red wine is also high in these compounds. One of the antioxidants in this fruit is resveratrol. Studies show that resveratrol protects against heart disease, lowers blood sugar and protects against the development of cancer."

Do you think that will bother anyone during my morning break? I mean, I am doing it to preserve my health, right?

(Cheat) rotisserie chicken.
Roasted butternut squash with salt pepper chili powder and brown sugar.
Roasted taters with fresh rosemary garlic salt pepper lemon.
Tossed salad with vinaigrette. Last of garden tomatoes.

Pinot Grigio.

Baby spinach salad
 
Salmon.
Rice with capers and scallions, cooked in chicken broth.
Roasted broccoli, garlic and parm.
 
Shrimp, white beans and spinach over rice. Garlic scallions lemon olive oil capers.
 
A Publix Southern Cobb salad tonight.

A guilty pleasure providing a little stress relief.

Tomorrow I'll probably go someplace for a huge bowl of pasta and screw the diet.
 
Beet soup with dark rye croutons and blue cheese.

It's that time of the year when I practically inhale beets and gourds.

It's in the oven now and it smells yummy!

It's been way too long since I've baked. Gotta do this more often.

I've made the so often that I don't really use a recipe anymore. I got the original recipe from a friend years ago. This recipe looks very similar to what I use, but I also add vanilla. I'd use less sugar or at least less powdered sugar to mix with the lemon juice, but I like the cake quite tangy, because sometimes I like to add the ganache, which is really sweet. It doesn't need the ganache though, the cake is really yummy on its own, too.

Ganache:

Heat up cream and white chocolate in a pan until the chocolate melts. Stir until there are no lumps. Heat up the cream just enough to melt the chocolate and stir just enough to get rid of the lumps, but not more. Let it sit until it cools down and becomes kind of peanut buttery consistency. Don't stir while it cools. White chocolate splits pretty easily, more so than milk chocolate or dark chocolate in my experience, so it's best not to stir too much. If you refrigerate the mixture, you can whisk it to make it a bit more fluffy. But it really has to be cold at that point or it might split.

I use a half a cup of cream to 6-7oz chocolate and a light sprinkle of salt.

Real ganache calls for butter too, but I skip that.
 
It was Father's Day here yesterday and I was in charge of the cooking for the entire lot. Meatballs, gravy, mashed potatoes, carrots and broccoli. Meatballs are dad's favorite non-fish food and I didn't want to cook fish for 11 people, so meatballs it was. They turned out great, I've been on a good cooking run lately.

I also baked a cake. Lingonberry-caramel. It was tasty, although I should have made the lingonberry mousse a little more tart and maybe could have added some whole lingonberries in it, too. Next time. Sorry for the bad pic, I forgot to take another after moving the cake onto the serving plate.
 
finally a nice cold night - just perfect for chicken noodle soup. I had put chicken in the crock pot and seasoned well yesterday. Split that up today and made a pot of chicken noodle soup. The other half of the chicken will become Chicken Pot Pie for tomorrow's dinner. Will take the balance of the soup to work tomorrow to share.

Fresh baked yeast rolls dripping with real butter is my kryptonite. I usually make a batch most werkends.
