What's cookin', good lookin'? Part II

No turkey leftovers this Thanksgiving (thankful for that!) I'm in the mood for duck. And probably buttermilk pie, if I knew how to make it.

I have a surfeit of buttermilk from making cornbread. Pie sounds like the absolute best way to use up the excess. NOM. :cool:

Did you ever try adding vanilla or lemon? If so, what did you think? I wonder how cinnamon would be... Or cinnamon cocoa.

I haven't, but... last month, I was in a a little restaurant that had buttermilk pie on their dessert menu that night. I've never seen it in a restaurant before, so I had to try it. It was a little different from mine, possibly a bit of vanilla, but I'm sure it had nutmeg in it, and it was a very nice touch. I'm sure cinnamon would be good, too.

It's tough to play with the family favorite when it only gets made once a year. We may have a larger gathering this year, so I might be making more than one and can experiment a bit with the additional one.
 
Beetroot quiche.

I had a little chevre to use up, so I put that in the quiche and some chopped walnuts, too. I made the (ultra rustic :rolleyes:) crust with teff and oat flour.
 
:) Baking pies for tomorrow. The cinnamon custard pie is in the oven now and I'll be baking a pumpkin pie next. Tomorrow I'll prepare a vegetable side dish to go with the rest being provided by others. Something I'm kind of excited about is the cranberry ginger cocktail I'm planning to mix up. It will have frozen cranberries and candied ginger, it looks so good! (๑>◡<๑)

I was pretty worried about the lemon juice, and even my vanilla (made by a friend and puuuuure alcohol) but after reading several recipes I followed Lyricalli's recipe and only varied it as necessary to add the other ingredients.

Well, naturally it split as soon as I added the extras :rolleyes: I whipped it on high for a few minutes and managed to bring it back together, but it still looks a little split :( It doesn't taste grainy, though. I hope it turns out ok. The taste is fabulous!

Can't wait to hear how it turns out. The first time I made it myself, I thought the filling looked a little split just as it is, and I chalked it up to 'I guess that's what buttermilk does.' Hope it's as fabulous once it's baked as it tastes going in the oven. :)
 
I get off easy this year: the champagne jello shooters are in the fridge already along with the caprese salad skewers waiting for balsamic glaze.
The only real cooking I have to do is bake two pecan pies tomorrow morning and I'm done!

Notes to self, and anyone else making the pie. Bring all ingredients to room temp first. Cream butter and sugar really, really well. I might cut back on the sugar next time (like by half!) but otherwise, awsome pie! I added one tablespoon of lemon zest, juice of half a lemon and a healthy glug of vanilla and this pie was amazing. Make it :)

I'm so tickled! Yay! I'm glad your amendments worked out so well for you. Last year, I cut the sugar by half a cup, and no one seemed to notice. I thought about going lower, but I don't bake a lot, and I wasn't sure if taking out more would affect the volume and the way the pie sets up. I'll definitely have to try one with vanilla and lemon now. I love lemon. :)
