doesn't matter how many covers you had. £5k for a restaurant on a friday night in london isn't going to cover staff, food, overheads and give much profit. Unless the restaurant is in your living room and you are cook, cleaner, waiter and washer-upper

You work out £5.5K x 52 Friday nights + the takings for every other night in the year.

Yes, overheads are then subtracted but that is "income taken directly from the competition.

Add that profit to the profit from the other two non-Michelins... That is what the direct competition are losing out on....

number of covers is really incidental. 10 @ £500 or 100 @ £50, you still pay business rates, staff and all the other stuff. My parents ran pubs in mayfair and soho so I know how high west end overheads are and only pulling in that amount at the weekends is not economically viable.

so assuming your 'restaurant' takes a consistent £5.5k a night at weekends, that only means you are getting £600k a year from it, a bit more with the rest of the week and lunch times. that is bugger all for the west end.
