Well...as long as you are well aware that bashing is not what this was set up for...I think theres enough of those on another board....and that I wont be involved in anything like that...it brings me out in hives and i cant be bothered to fight..i do enough of that with my ex husband :D :rose: x
 
Hobo Pie


1 lb. ground beef
15 oz. can tomato soup
1 can corn - drained
1 cup chopped onion
2 med. bell peppers
1 tsp. chili powder
1 1/2 tsp. salt
1 tsp. pepper
2 eggs
1/2 cup milk
1 tbs. flour
1 tbs. shortening or oil
1 cup cornmeal


Preheat oven to 350 degrees. Brown meat and onion, stir in tomato soup, bell pepper, corn, chili powder, 1 tsp. salt and pepper. Bring to a boil, lower heat. Cover and simmer for 15 minutes. Pour into deep cast iron skillet. Beat together eggs, oil, and milk for 1 minute in small bowl. Beat in cornmeal, flour, and salt until well blended. Pour over meat to cover entire surface. Bake for 20 minutes.

Red Velvet Cheesecake
Red Velvet Cheesecake

1 1/2 cups Nabisco Chocolate wafer crumbs (about 3/4 box, processed
in blender)
1/4 cup (1/2 stick/2 oz./56g) butter, melted
1 tablespoon granulated sugar
3 (8-ounce) packages cream cheese, softened
1 1/2 cups granulated sugar
3 tablespoons unsweetened cocoa
1/8 teaspoon baking soda
4 large eggs, lightly beaten
1 cup sour cream
1/2 cup whole buttermilk
2 teaspoons vanilla extract
1 teaspoon distilled white vinegar
2 (1-ounce) bottles red food coloring

Topping:
1 (3-ounce) package cream cheese, softened
1/4 cup (1/2 stick/2 oz./56g) butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
3/4 cup chopped pecans, lightly toasted (optional)

Garnish: (optional)
Fresh mint sprigs
White chocolate curls

Instructions:
Stir together wafer crumbs, melted butter, and 1 tablespoon
granulated sugar; press mixture into bottom of a 9-inch springform
pan.

Mix 1 1/2 cups sugar, cocoa and baking soda. Beat 3 (8-ounce)
packages cream cheese and sugar mixture at medium-low speed with an
electric mixer 1 minute. Add eggs and next 5 ingredients, mixing on
low speed just until fully combined. Pour batter into prepared crust.

Bake at 325 degrees for 10 minutes; reduce heat to 300 degrees, and
bake for 1 hour and 15 minutes or until center is firm. Run knife
along outer edge of cheesecake. Turn oven off. Let cheesecake stand
in oven 30 minutes. Remove cheesecake from oven; cool in pan on a
wire rack 30 minutes. Cover and chill 8 hours.

Topping:
Beat 1 (3-ounce) package cream cheese and 1/4 cup butter at medium
speed with an electric mixer until smooth; gradually add powdered
sugar and vanilla, beating until smooth. Spread evenly over top of
cheesecake. Spread pecans over topping and press lightly with hand
(optional). Chill at least 3 hours. Remove sides of springform pan.
Garnish, if desired, with fresh mint, white chocolate curls or other
seasonal greenery.

Makes 10-12 servings.
 

Jellied Moose Nose


1 Upper jawbone of a moose
1 Onion; sliced
1 Garlic clove
1 tb Mixed pickling spice
1 ts Salt
1/2 ts Pepper
1/4 c Vinegar
Cut the upper jaw bone of the moose just below the eyes.
Place in a large kettle of scalding water and boil for 45 minutes.

Remove and chill in cold water.

Pull out all the hairs - these will have been loosened by the boiling and should come out easily (like plucking a duck).

Wash thoroughly until no hairs remain.

Place the nose in a kettle and cover with fresh water.

Add onion, garlic, spices and vinegar

Bring to a boil, then reduce heat and simmer until the meat is tender. Let cool overnight in the liquid.

When cool, take the meat out of the broth, and remove and discard the bones and the cartilage. You will have two kinds of meat, white meat from the bulb of the nose, and thin strips of dark meat from along the bones and jowls.

Slice the meat thinly and alternate layers of white and dark meat in a loaf pan.

Reheat the broth to boiling, then pour the broth over the meat in the loaf pan.

Let cool until jelly has set. Slice and serve cold.
 
Cheery Cranberry Chocolate Chip Bread
Ingredients:

* 1 cup Semi-Sweet Chocolate Chips
* 1 cup fresh or frozen cranberries, coarsely chopped
* 1/2 cup pecan pieces
* 2 teaspoons freshly grated orange peel
* 2 cups all-purpose flour
* 1 cup sugar
* 1-1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 2 tablespoons shortening
* 3/4 cup orange juice
* 1 egg, slightly beaten
* COCOA DRIZZLE GLAZE(recipe follows)

Directions:
1. Heat oven to 350°F. Grease and flour three 5-3/4x3-1/4x2-inch miniature loaf pans.

2. Stir together chocolate chips, cranberries, pecans and orange peel in small bowl; set aside.

3. Stir together flour, sugar, baking powder, baking soda and salt in large bowl; with pastry blender, cut in shortening until mixture resembles coarse crumbs. Stir in orange juice, egg and reserved chocolate chip mixture just until moistened; divide evenly among prepared pans.

4. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool 15 minutes; remove from pans to wire rack. Cool completely. Drizzle COCOA DRIZZLE GLAZE over top. 3 loaves.


COCOA DRIZZLE GLAZE

1 tablespoon butter
1 tablespoon Cocoa
Cocoa
1 tablespoon water
1/2 cup powdered sugar
1/2 teaspoon vanilla extract

1. Microwave butter in small microwave-safe bowl at HIGH (100%) 20 to 30 seconds until melted. Stir in cocoa and water. Microwave at HIGH 15 to 30 seconds or just until mixture is hot, slightly thickened and smooth when stirred. Do not boil.

2. Gradually add powdered sugar and vanilla, beating with whisk until smooth. If necessary, add additional water, a few drops at a time, until of desired consistency. About 1/4 cup glaze.

Cinnamon Chip Applesauce Coffeecake
Ingredients:

* 1 cup (2 sticks) butter or margarine, softened
* 1 cup sugar
* 2 eggs
* 1/2 teaspoon vanilla extract
* 3/4 cup applesauce
* 2-1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1-2/3 cups (10-oz. pkg.) Cinnamon Chips
* 1 cup chopped pecans(optional)
* EASY GLAZE (recipe follows) or powdered sugar

Directions:
1. Heat oven to 350°F. Lightly grease 13x9x2-inch baking pan.

2. Beat butter and sugar in large bowl on medium speed of mixer until well blended. Beat in eggs and vanilla. Mix in applesauce. Combine flour, baking soda and salt; gradually add to butter mixture, beating until well blended. Stir in cinnamon chips and pecans, if desired. Spread into prepared pan.

3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Drizzle with glaze or sprinkle with powdered sugar. 12 to 15 servings.

EASY GLAZE: Stir together 3/4 cup powdered sugar and 1 to 2 tablespoons warm water.
 
Boogers On A Stick

8 ounce Jar cheez whiz
Green food coloring
25 To 30 pretzel sticks



With an adults help, melt the cheeze whiz in the microwave or on top of the stove, according to directions on the jar.

Allow the cheese to cool slightly in the jar.

Using a long handled spoon, carefully stir about three drops of green food coloring into the warm cheese, using just enough to turn the cheese a delicate snot green.

To form boogers: Dip and twist the tip of each pretzel stick into the cheese, lift out, wait twenty seconds, then dip again. When cheese lumps reach an appealingly boogerish size, set pretzels, booger down, onto a sheet of waxed paper.

Allow finished boogers on a stick to cool at room temperature for ten minutes or until cheese is firm.

Gently pull boogers off waxed paper and arrange on a serving platter. Serves 5 to 6 booger buddies.
 
Hush Puppies
2 C Cornmeal
1 Tbs Sugar
¾ Tbs Baking soda
2 Tsp Salt
1 Tbs minced Onion
1 Egg
1 C Buttermilk
4-5 Tbs Cold Water

Stir corn meal, sugar, soda and salt together. Place onion in a small bowl; add egg, buttermilk and beat until frothy. Pour all at once into the meal and stir lightly to mix. Add just enough of the cold water to make dough a good dropping. Fry in a deep fat fryer for about 2 minutes or until evenly browned. (Makes about 2 dozen)
 
Cow Udder Eclairs

12 fresh lean cow udders
1 pint of whipping cream
1 cup of brown sugar
1 can artichoke hearts
1 stick butter
1 small filleted smelt
1 container of Nair

Soak the cow udders in Nair to remove the hair. Repeat several times if
necessary until all hair is removed. Rinse in warm water. Place a stick of
butter into a warm frying pan. Wait until all of the butter has melted,
then add the cow udders. Fry them for 15-20 minutes until golden brown.
Chop the artichoke hearts and smelt on a cutting board into fine pieces. In
a large bowl, add the whipping cream, brown sugar and the chopped artichokes
and smelt. With a mixer on low, whip until creamy with a consistency like
vanilla pudding. Remove the udders from the pan and make a long slice down
the side of each udder. Spread the pudding mixture into each slit. Serve
warm or cold and have an "Udderly Wonderful" snack.
