Unfortunately @lakesailer_mi there is no easy way to do this, other than installing a chartplotter on your sailboat so you can see on the fly what your optimal track is in that moment. I always was under the impression that you foot and then point and never was it an either or situation. This might be a different cultures convention, but then that's not an answer to your question.
Think polars, you should have an idea of what they are for your sailboat and then you will need to formulate in your head what distance vs angle is the optimal on that tack. You could laminate your polars and take them with you, then have a map of the course and interpolate on the fly, but shame you are tired and weary and all the young guys are faster . You probably already do this, so really I am no help to you at all. All I can suggest is for you to visualize the triangles or vectors for different scenarios and then interpolate. When you do it often enough it should become intuitive when racing, I can't say that it will work all the time but it will work most of the time.

In sailing, we have tack to the upwind mark. I have new sails and it seems I can't point higher. But higher pointing is always at the cost of lower speed. So, it's and angles (distance) vs speed thing: is it better to go slow but travel less distance or go fast, but travel further.
Obviously on shore, I can do the trig and work the math out. But I can't do that on the fly on a boat - especially by mid day when I'm getting tired.
