You would think that something as common as scrambled eggs and good cofee would be simple to make, but the facts are to the contrary. That's why I suggest that if you find a place that makes good scrambled eggs and a good cup of coffee, that you make friends with the waitresses and find a friend to join you there for breakfast at least once a week. Trust me; it's a treat!

You can't make your own eggs and coffee? I'm not a coffee drinker, but even I can make decent scrambled eggs. I like to add chives to mine.
 
Nope..never, in my experience, has a resturant made scrambled eggs the way I like them. I usually get fried, over medium. S.E Michigan huh? Where would this good egg making/cup of coffee place be?
 
Blue, if you found a restaurant that makes scrambled eggs the way you like them thank your lucky stars. You found a restaurant with a cook who likes his/her scrambled eggs the same way you do.

Actually, the main reason scrambled eggs are so hard for restaurant cooks to make properly is because they are trying to make them on a flat grill instead of in a skillet. It's the skillet that makes the difference.
 
over medium?

I think a proper over medium egg is almost impossible to find.

My solution is to not order eggs...and not be disappointed.

I think you're right Blue. If you find a place that can cook an egg, earmark it.
 
Lizzy, check out the Sunrise on.....

N.W. Hwy in Southfield or the Embers Deli ion Maple in B'ham. The Sunrise is tops for omeletes! The Embers has the greatest corned beef hash in the world.

P.s. I make great eggs and really good coffee, but I like breakfast out with a pal and/or dr. blue, especially on the weekends.
 
Well, now..................

I know a country kitchen with a great chef. Eggs over easy, eggs over hard, scrammbled eggs, soft boiled eggs, hard boiled eggs, omelets. With either streak, bacon, saugage, ham, or hash. Incredible home frys. Freshly made butter milk biscuits. Real dairy butter. O.J. and/or Dunkin Donuts coffee:D :D :D

However, you get to clean up afterwards;)

I agree, it's very hard to find good scrambled eggs out. I, however, have perfected the process in my own home.

Eggs, dollop of milk or cream. Salt and pepper. Medium hot pan with melted butter. Keep the eggs moving. Remove from heat before they are fully cooked. Very important. They will continue to cook in the hot pan away from the heat. Keep them moving. Remove to plate as soon as the "gloss" is gone.

Eggs over easy or medium: Medium hot pan with butter. When they are cooked on the bottom but still clear on top, add a little water to the pan and cover. The steam will cook the top. For easy, turn off the heat immediately after adding water, for medium, keep the heat on for a minute or two.
 
C'mon blue ole' man, even I (she who cannot cook) can make scrambled eggs (the coffee thing goes without saying). Follow Ruby's advice, it's the same way I do it and they turn out perfect every time.

There is a place in Greensboro, N.C. that does over-easy the way I like it.

Why do you want to ruin perfectly good eggs by scrambling
them?

Fried,boiled,poached,even raw.Anything but scrambled.

I go to the University @ Buffalo, and if you can get your lazy ass up at 7, the "egg guy" as we call him makes eggs anyway you want em, and they're delish!

Omelettes are fine,but not when they're all airy fairy(light
and fluffy).

Scrambled eggs look OK,but only taste of what you add.

Perhaps us Brits don't make them right.

I never seem satisfied with ordering scrambled eggs either (I prefer sunny up or poached), but one of my girlfriends makes the most delicious scambled ones, really fantastic! Unfortunately her coffee stinks (as does mine). Best coffee is from the wagon on any corner on Broadway in the Times Square area (weekdays only).
 
I normally make my eggs over medium, but today for lunch I think I'll make scrambled. You gave me a craving, Blue. ;)

It's not a restaurant but I can whip you up some really good fried eggs and bacon and toast with a very good steaming cup of coffee.......:).......If I must say so I am a pretty good cook!!

Breakfast involving some sort of egg is invariably best when it is home cooked.

My favourite way to cook eggs is to coddle them. Does anyone else do this?

To coddle or not to coddle............

I found I would go threw dam near a dozen eggs before I would get maybe two or three that responded to this form of affection. I would hold them tightly against my naked chest and caress them. Most unable to adjust to this sign of affection would just fall apart:( Leaving me with a very moist chest. I am in search of a female that is willing to run her tongue of my bare chest. With special concentration to the nipple area:D :D :D You must enjoy being coddled!

I only coddle eggs on special occassions:p :p :p :p

Coddling

Fraid it's not quite as sensual as Jadeds version.

To coddle eggs you need an egg coddler, which in my experience is a small china pot with a metal lid which screws on tight.

Grease the inside of the pot with butter, break your egg into it, season and screw the lid on tight. Pop the pot into a pan of boiling water and leave for however long takes your fancy (5mins or so)

When time is up, try to avoid scalding yourself on the removin ght epot from the boiling water and burning yourself when removing the lid. What you have inside is a wonderfully smooth hot egg to enjoy. MMmmmmm. Now I'm really hungry.

I disagree. But I may not be a good example to use. My Father was a chef in the Air National Guard. He knew how to cook anything. Even a critter that the men would shot in the fields. (only kidding).

I do agree that it is difficult to find an establishment that cooks any kind of eggs well and make a good cup of coffee. I will not speculate why but being that it is so easy I have no valid or good excuse to give for such a thing to occur.
