Artichoke and Sun-Dried Tomato Pasta

I made this several times this summer - It's really easy and liked by all.

Ingredients

1 (8 ounce) package fresh fettuccine

4 tablespoons butter
1/2 medium onion, chopped
1 (8 ounce) package sliced mushrooms
3 cloves garlic, crushed
2/3 (8 ounce) jar sun-dried tomatoes, packed in oil
1 (2 ounce) can sliced black olives, drained
10 ounces marinated artichoke hearts
1 cup dry white wine
2 tablespoons lemon juice

1 ripe tomato, chopped
1 cup Parmesan cheese
1 teaspoon black pepper
Directions

Fill a large pot with lightly salted water and bring it to a rolling boil.

While the water is heating, melt the butter over medium heat in a large saucepan. Add the onions, mushrooms, and garlic; cook and stir until tender, about 5 minutes.

Stir in the sun-dried tomatoes, olives, artichoke hearts, wine, and lemon juice. Bring to a boil; reduce the heat and simmer until liquid is reduced by a third, about 4 minutes.

Cook the fresh pasta in boiling water until done, about 2 minutes. Drain.
Toss pasta with sauce. Top with fresh tomatoes and cheese, add pepper to taste, and serve.

Baked Vegetarian Ziti
Ingredients:
• 2 quart jars Arrabbiata sauce
• 1 zucchini sliced length wise and very thin
• 8 ounces sliced mushrooms
• 1 onion chopped
• 1 pound ziti
• 4 cups shredded mozzarella
• ½ parmesan romano cheese mix
• ½ cup bread crumbs (I use Italian style)
Method:
1. Cook ziti until al dente. Drain.
2. Mix parmesan/romano, bread crumbs and 2 cups of mozzarella.
3. Layer the ingredients in the following order in an ungreased 9X13 pan:
a. 12 ounces sauce
b. Ziti
c. Mushrooms
d. Onions
e. 12 ounces sauce
f. 2 cups Mozzarella cheese
g. 12 ounces sauce
h. Zucchini
i. 12 ounces sauce
j. Parmasan/Romano, bread crumb, mozzarella mix.
4. Cover with tin-foil and bake at 350 degrees for an hour. Make sure you have a cookie sheet under the pan will backing, as this is extremely juicy.
5. Remove the foil and bake an additional 15-20 minutes or until the top cheese mixture is melted and golden brown.
6. Remove from oven and let sit for about 10 minutes.
7. Serve!
 
There's a wings and wienies here where I can get Sahlen's, but no TRH sauce. I am so with you about Tabasco.

If you google "Charlie the Butcher" and weck, there's a nice recipe on how to turn a hardroll into a weck. It's a reasonable facsimile.

Oh, ABG! I've been dying for some sushi lately! :eek: My favourite place downtown makes these amazing sweet potato tempura sushi rolls- they're sweet and crunchy and soo delicious! *tummy rumbles*

Two hard-boiled eggs and toast for breakfast are just not going to satisfy me this morning :rolleyes: :D

At least you have your protein in today. I had a green protein shake before my run. It's the nastiest thing ever. I don't think I'll have anymore of it. Trying to be healthy is crappy.
 
Try this recipe on any of the lesser cuts of meat - chuck steak, flank steak or London Broil. The key is the marinade. Let it sit for at least 8 hours, preferable overnight.


Ingredients:
• 3 or 4 pound Flank Steak
• Marinade consisting of:
o 1 ounce (1 packet) of Dry Steak Seasoning
o ¾ cup cider vinegar
o ¼ cup water
o ¼ cup olive oil
Method:
1. In a mixing bowl mix together the seasoning, vinegar and water.
2. Add oil and mix well.
3. Put steak in a large (gallon size) ziplock bag. Pour marinade over the steak.
4. Refrigerate and let marinade overnight (or at least 8 hours)
5. Grill on low temperature (between 200 and 250) for at least an hour or until the internal temperature reaches 160 degrees.
6. Let sit for 5 minutes before slicing. Slice with the grain and on a slight angle.
 
Yellow fin blackened tuna

Let tuna sit out for a few mins so it's not straight from fridge. There isn't much cooking time and cold rare tuna with a hot crust is kind of odd.

So turn stove on high and let pan heat up. Make a good crust of blackening season on one side of tuna. When pans hot, put in some olive oil. Put tuna in seasoning side down til it's seared and crusty. Season other side and flip over and sear. Tuna should be very rare.


Serve immediately.

Optional: mix 1/8 cup of soy sauce, a teaspoon of rice wine vinegar, and a dash of sesame oil.

Dip tuna in and eat.
