favourite apples

bought some luscious honey crisps today for eating... big, crisp, red/gold, and each bite tasting like autumn. the sort of apple i'd use for toffee apples.
(reminiscent of a cox's orange pippin)

of course, it goes without saying that granny smiths are the ONLY apple pie apple to consider -- unless y'all know something different and can persuade me of its merits!

Northern Spy

Definitely worth the effort to find Northern Spy apples for pies... tart and don't turn into mush.
 
For eating, I like sweet, crisp and juicy varieties like Gala and Fuji. I recently had an amazing apple from a friend's garden - it had the look and flavour of a Russet, but without the mealiness that they often have. I have no idea what it was called.
For baking, I like Granny Smith, with Bramley as a close second.
 
Empire or Cortland because they're easily found and just right for eating.

Russets when you can find them, which is rare for supermarkets, sometimes at farmer's markets.

We've been buying more from farmer's markets. More and more the supermarket apples seem like they're the ones stored in low oxygen warehouses since the previous year... kinda dry, skin going wrinkly, and generally on the way to being yucky.

Really appreciating Granny Smith apples this year. Had one for an afternoon snack a few times this week.
