LB - I just checked out a Mario Batali cookbook from the library recently and his alfredo recipe did NOT include cream cheese (looks sternly at yankee).
I again inadvertently had too much white wine. It's so deliciously crisp and easy to drink. Must not do that again.

The cream cheese helps thicken the sauce and gives it a tang that I happen to like. Last I heard, food was about flavor, among other things.![]()
Miss Bossy Pants here is feeling a bit sheepish, which is why I didn't say anything about the cream cheese the first time around. Of course I had no self control the second time.
Whatever works for you, yanks. Who am I to judge? Cream cheese all around!

I am alarmed, gravely so, that food discussions are finding their way into other threads.
I fear that this is about to become the AA thread unless we take charge.
I've already forgotten where I read about mole sauce...and then there was another food digression in a really weird place.
We need to be vigilant about keeping food discourse here. Because, after all, we are not winos. Right?
At least I'm not.
