A little technical . . .

But this only applies to Caucasians, doesn't it?

Actually no. Any change in base skin color can be seen and documented in anyone. Some skin types lead to comparison more easily and some skin types, ie. darker colored african black, require the use of such areas as the palms, lips and gums and the nail beds.

When I look at a patient I look at all aspects of their body including but not limited to their palms, nail beds, lips and gums, Sclera, (Eyes) as well as their skin. (Scar tissue is also a usefull indicator of skin coloration.)

Have you ever seen a black person suffering from something like Hypothermia or Hypoxia? The change in skin coloring is noticable.

Many moons ago . . . .
Our local garage was run by two clever Pakistanis, who did a good job. One of them "went home" for a month and upon his return the joke was that he'd got sunburn. It wasn't until he showed me that I believed him.
