Imagine a highly concentrated capsaicin hit. I use it from flavoring pots of chili, to drinks, to breads, to ice cream and cookies. Oh, and to torture my In-law's.

I ate a plain habanero once. It was not the worst. Mixing them with other food makes them better though. Homemade habanero cookies and ice cream do sound heavenly.White chocolate chip with orange habaneros.

The acidic bite of the hotter peppers can make them difficult to eat straight. That's why s lot of hot sauces are fermented and and mixed with other ingredients.

There was a candy maker out here who made pepper fudge. Jalapeno, habanero, and ghost pepper. I loved the ghost pepper one -- the sugar and fats damped down the heat, so you could taste the pepper itself, which was lovely. Still hot, just not as hot.
