Sounds good … I could go without onions and jalapeño but I like the sautéed onions or caramelized onions.Salt, pepper, a little worcestershire sauce. Handle the meat as little as possible 80/20 fresh from a butcher if you can. Charcoal grill. Medium rare.
Toppings: Cheese(Any kind, even American. Fight me.), sliced vidalia onion, fresh jalapeno slices, a little ketchup, yellow mustard and mayo. Yes... mayo. Lettuce and tomato optional. Also, sautéed onions and mushrooms with swiss cheese is fucking fantastic.
Onion buns. Or, everything seasoned buns.

And I wouldn’t judge your cheese choice for American cheese … that melty goodness is delicious
