How's this for picky?

Pork shoulder: dry rubbed the night before, smoked for 12 hours, vinegar based sauce. I like that Carolina style.

Ribs: Dry rubbed, smioked all day, no sauce.

Brisket: Dry rubbed the night before,smoked 12 hours, coffee and tomato based sauce.

It's a labor of love.
