I take wings off all the time: i feed them to the critters here :eek:.

No critters get the mid-joint. I get those. In fact, If I'm going to be making a batch of wing on the grill, they will ALL be mid-joints, unless her majesty desires drumettes.
 
I see a Costco run in the near future.

Mrs t was to Costco on Monday and brought home two huge red king crab legs for Monday's dinner.

For Christmas, we're having a roast leg of lamb from Costco over at grand daughter's house.

And I have pickled and smoked fish from Costco in the office fridge for a snack.
 
Man, I wish we had a Costco. Or that I was eating at Thor's house.

Our burg has two Costcos and two Sam's clubs. And, they are always busy.

Tomorrow, beef short ribs go into the Akorn at about 7:30AM for 8 to 9 hours at 225°F over lump charcoal and a bit of hardwood. Dinner is at 6p.
 
dinner for christmas day has been set. cochinita pibil cooked wrapped in banana leaves, jicama/avocado/red onion salad, pickled peppers and onion, white rice, tortillas, ponche. for dessert there is flan.
 
Christmas day is forecast to be fucking hot for most of Oz, so a radical rethink of the family lunch and dinner is in order.
We are having an antipasto table for lunch, followed by homemade vanilla bean icecream and berries.
For dinner (when it's a bit cooler) we're having chilled spicy prawns for starter, turkey and cranberry burgers for main, and homemade cherry sorbet and berry fruit salad for dessert.
I deboned the turkey :eek: and have minced it up with cranberries, spices, etc and made patties with it. Cooked up a small batch to test - perfect! Tastes just like baked sliced whole breast :)
 
Christmas day I am going to a traditional lutefisk dinner that will have Swedish sausage, baked potatoes, Swedish cucumber salad, glug, lefse, aquavit, ligenberries and I don't remember what else.

I doubt I will be eating any of the above except maybe potatoes. I will be bringing my own sausage to eat and maybe some mashed sweet potatoes since I strongly dislike being in ERs on the holidays. Although we will be near my favorite ER... ;)

It takes a while for the Akorn to warm up from 10°F. The meat didn't get on until after 8a!
 
santa's cookies were just pulled from the oven. it is now time to get the flan baked.

eta - the original recipe is from southern living, but my cookbook met an early end. here is a link to some amazing flan. before pouring the final custard into the pan, sieve it. that's the trick to the creamiest flan ever. recipe

We do the traditional fried chicken breakfast for christmas. And I have made damn sure it's gonna last at least one more generation. :D

Holiday Turducken on a Budget Instructions:

Build the Turducken from the inside out.

First hollow out several Vienna Sausages and stuff with Deviled Ham.
Hollow out a large chunck of Spam and insert the Deviled Ham stuffed Vienna Sausages into the hollowed Spam.

Bake at 350F for 25 minutes topping with a slice of Kraft American cheese (or Velveeta slice) during the last 5 minutes of baking.

Serve with white bread and ketchup.
