Hey Tortoise? Did you see the article in Cook's Illustrated last month about chef's knives? Forschner's 40520 and Wusthof's Grand Prix were the top, but a surprising 3rd was the Oxo Good Grips Mv55-Pro at a whopping $30. The Forschner's also only $30, but it doesn't have a bolster at all. Anyway, it's a neat article.
