I noticed I've cooked my way around the world this week.
Monday: blinis with vendace roe, smoked salmon and the other fixings (Russia)
Tuesday: chickpea curry (India)
Wednesday: Moroccan lamb stew (Morocco)
Thursday: frijoles charros (Mexico)
Friday: mussel bisque (France)

Menchi katsu burgers
Ground beef, broccoli, carrot, onion and panko mixed together and formed into burger patties. Patties are breaded and deep fried.
The sandwich consists of the menchi katsu, tonkatsu sauce, mayo, cheese, and shredded cabbage. These came out awesome![]()

I have never thought of pairing soup with pancakes. It's quite natural to slice up some hearty bread with a good soup but never has it occurred to me to let pancakes be the starch in this equation.
That said, I wonder how similar/different are your and my pancakes?

Our pancakes are like crepes, not thick like yours over there. And then there's the oven variety, too. It's pancake batter baked in the oven. That one's thick, but no leavening agent is used, so it isn't fluffy.

How do you keep the patties from drying out?

Well, these are thick and deep fried so I'm sure that has something to do with it.
If I make a regular burger I usually cook on the stove and cover only flipping once. Also, the right ratio of fat in the meat can make a difference.I don't really know if this will help, I don't usually make burgers. The menchi katsu just happened to have healthy veggies in it that I like (^_^)
Friday used to be a day of lent back in the Catholic days, and that's why people tanked up on hearty peasoup on Thursdays. The tradition was pretty pan-European at some point, but now the peasoup on Thursdays is only alive and kicking in the north. The lent not so much, though. Or the Catholicism.
The pancake is a later addition, from the 19th century. It was first served with peasoup on Shrove Tuesday, which is another day when peasoup is traditionally eaten. Then as the pancake ingredients became cheaper, pancake started to be paired up with peasoup on Thursdays, too.
