What's cookin', good lookin'?

I've been experimenting with taquitos lately. The end result is probably not something anyone who actually cooks Mexican food would call a taquito, but they're nice anyway. I blend together chicken mince, red onion, some spices (whatever's in the cupboard, really), and some cheese and then roll the mix in little tortillas and bake 'em. Served with sour cream and shredded iceberg lettuce. Yummy.
 
Poached eggs this morning, in my fancypants new silicone cup thingies.

First time out, I over did them though, cooked to firm. Oh well. Further experimenting will be done over the next fortnight before I cook them for someone else.
 
Did you know that Sushi cooks go to school for sometimes 12 years in order to learn to make Sushi properly?
 
Wife served one of my favorites tonight's dinner.. Clams over Linguini with white sauce and sour dough bread to sop up the dripping.

I don't have a recipe. It is kinda one of those I just put thing in until it tastes right. .

This should serve four.

2 cans of clams and juice.

1 lemon & some zest.

1/2 lb Fettuccine

Some dry white wine. Save some for drinking with dinner.

Capers

Artichokes i

Chopped Garlic

3-4 anchovies and save the oil.

fresh or dried Basil

Good EVOO.

Cook pasta. let set in water when Al Dente

Add EVOO to hot pan and Garlic and saute until soft.

Add anchovies and a little bit of the oil then cook until dissolved.

Add clams, juice and wine

Add Artichokes, and lemon juice and zest.

Bring to a boil. Add Pasta warm pasta to sauce. Add capers. warm.

Plate and garnish with sliced Black olives and basil.

We like it rather acidic. Taste as you add things to your taste.

Serve with ether good sour dough bread or Italian garlic toast.

We use Sauv. Blanc. by the expensive winery Robert Shaw. Usually sold on Traders Joe's for the exorbitant price of three bucks.

Ooops, I was just informed tonight's wine was Trader Moon's Bay Moon wine. Priced at $5.00. Damn the expensive stuff tastes so much better.<G>

In process now: whoopie pies for tonight's block party. The chef (not me) is going to be very popular around the neighborhood.
 
Focaccia rolls, heirloom tomato, mozzarella, and pesto paninis, served with oven toasted zucchini sticks and zesty garlic laden marinara for dipping.
 
We're gonna have McD food today, because we have some coupons for free meals and they will expire today. It'll be my first venture to McD after August 2009, when I had a cheeseburger at Warsaw Central railway station. I'm oddly exited by the thought of it. :)

ETA: Not excited excited, as in, not sexually exited. You perv!

Beef, mushroom, sweet potato and bean casserole

Sweet chilli noodles with asian greens, red cabbage, spring onion, capsicum and carrot

Some sort of ratatouille type concocotion with pumpkin, eggplant, zucchini, green capsicum, red capsicum, mushrooms, tomatoes and spanishy flavours, to which I'm going to add chicken and cous cous


Still to come:

Chicken and chorizo casserole
Spaghetti bolognaise
Lamb rogan josh
 
Home made baba ganoush and pita bread.
Roasted chicken and bell pepper.
Couscous with apple.
Wilted spinach with garlic.
Leftovers of Sunday's rhubarb pie for dessert.
 
Today was one of those days where I'm glad I planned semi-comfort food for dinner.... and was very happy to realize there was still beer in the fridge.

Fudge swirl ice cream

*I tried a new potato salad recipe I found online, and while it only got a 1 out of 5 thumbs up from the kids, I am newly in love. Red potatoes, a few scallions, lemon/olive oil/dill dressing, tossed with a spinach chiffonade. It was good last night, but mellowed in the fridge overnight and ended up being this bright, summery, lightweight, perfect accompaniment to the chicken.
 
Halibut cheeks with couscous...and what's even better is that I'm not doing the cooking, only sitting there admiring the cook. :D
 
Last night was clams in chorizo and tequila sauce, roasted duck and corn. And I still got to just sit there and just admire the cook. Okay, so I also made triple chocolate brownies.

Tonight it's only leftovers because the cook is off busy volunteering.

I'm really enjoying a man who can cook a bit of heaven every night...but I'm starting to fear my curves becoming fuller curves.

When I am away for long I get cravings for Mcfood.

After 5 days of the freshest tasting food in Dublin, my body started screaming for junk food. I know he thought I was mental, but I really was curious to see how it differed from the US version anyway. :eek:

Beach side home made seafood chowder... Salt pork, lobster, clams, scallops, shrimp, crab, and potatoes all bubbling in heavy cream.... mmmmm.
 
Summer food doesn't get much better than this...
