What's cookin', good lookin'? Part II

We call it mush or porridge for breakfast

Blueberries (frozen from summer), apples, banana and other fruit as available.

Water, peanut butter and about a cup of granola. It’s super carby, but great power food if you are working outside.

I usually only eat two meals a day so as a heavy breakfast by late morning this is a good one.

Moderately high protein while getting most carbs from veggies and some fruit is what works best for me, so normal breakfasts are quite different from that decadence.
A treat once in a whileis nice though and in my defence I didn’t eat all of the Nutella.
 
Does putting things on top of various fermented dairy products count as cooking? If not, I haven’t cooked in a while now. I’ve gotten so lazy…

I’m having dinner with friends today, it’s a yearly thing for us. It’ll be a sorta fancy buffet with tons of yummy seasonal things and I’ll probably overindulge on cheese and fishy things like every year. Traditions are good.

I overindulged in fishy things, smoked sausage and cheese yesterday at a work function.

Visited the Italian for lunch today and had lasagna.
Lasagna in general makes me happy and this was goood lasagna.
 
Christmas dinner. 🎄

-Radicchio, pear, blue cheese, pecans and vinaigrette
-Beet carpaccio with goats cheese, walnuts and black currant dressing
-Marinated salmon with lime and rosé pepper
-Cold smoked pike
-Hot smoked salmon
-Gravad whitefish
-Rye chips with roe mousse and extra roe on top
-Beet soup with blue cheese and croutons after the fishy feast
-Panna cotta with mulled wine syrup and pecans for dessert

So. Much. Food. We were supposed to have a guest but it was canceled at the last minute due to the sniffles. I think we’ll skip the cheese course.
 
My one sister is orthodox Jewish (converted) my other sister is vegetarian.

Christmas dinner (Jewish sister still comes over for Christmas) is always vegetarian lasagna. Sauté peppers, onions, broccoli, cauliflower, yellow, and green squash. layer in between the lasagna pasta, ricotta cheese, fresh mozzarella, and homemade tomato sauce that I canned last summer.

I much prefer vegetarian lasagna over the meaty kind, so this sounds absolutely divine. For extra oomph, may I suggest, roast the squash and peppers the next time. It’s such a deep, intense flavor that roasting brings out of them. I also like to roast red onion to put in the lasagna as well.
Todays menu includes chicken breasts wrapped in Parma ham and baked, sausagemeat stuffing, roast rosemary potatoes, boiled Brussels sprouts and green peas and a big jug of gravy.

Yum! We have duck breast in the fridge that we were supposed to cook yesterday but because our Christmas guest canceled, we had so much leftovers that we’ve been eating them instead. Will cook the duck tomorrow. Fig sauce, potatoes, white beets and carrots to go with the duck.

I absolutely adore duck. We had a feed of goose on Christmas Eve. The lean chicken breast today was a welcome break from fatty goodness 😂
 
We had Duck a l’orange with King Edward potatoes and brussel sprouts, the evening before Christmas Eve. We have made that our own tradition.
We made two extra duck breasts that we had today, with chevre, honey and thyme.

Christmas Eve we cook for extended family - the traditional Swedish Christmas smörgåsbord.

Christmas Day cooking for even more extended family - cod with mustard sauce, amandine potatoes and a salad made with red cabbage, kale, carrots, pomegrante and a mustard and poppy seed dressing.
 
We are having pork medallions in a chanterelle and lingonberry sauce with potato croquettes and brussel sprouts.

For dessert a dulce de leche mousse on gingerbread crumble, garnished with lingonberries.
Sign me up for some good lingon action any time!

I made hotdogs for lunch. Well, I made the buns, not the sausages. Turned out pretty good.

I’m going to a dance performance this evening that sounds weird and wonderful. I don’t know what’s for dinner after that. Maybe we can squeeze ourselves into some eatery, or if not, there’s another round of hotdogs I suppose.

Kids are off in different directions and we moved the gathering if friends to next weekend so kids could meet too and we thought it would be just the two of us for the first time since I don’t know when.
Then it turns out that one kid will host a pre-party gathering here and a smattering of people who had to abandon other plans for different reasons will gather here with us, so it will be a pretty full house after all.

I saw a post on Twitter about poached eggs. I’m just about to have poached eggs over crumbles of toast, just like mom used to make.

I hope that’s not a Freudian reference of any kind … 😂
 
Made bread rolls to go with carrot ginger soup. The soup was so-so, the bread was delicious.

We made the pork medallions with chanterelle and lingonberry sauce againfor the party last night, because just about anything else we could think of didn’t work with peoples allergies.

I made puff pastry boats with brie and cranberries for appetizers and almond paste mousse with spicy orange salad for dessert.

Used a recipe that my father used to make when I was a kid:
Sole Madeira, made with sole, onion, capers, cornichons in a tomato cream sauce with a hint of cognac and lots of black pepper.
It turned out great and my inner pyromaniac got to get out and play a little flambé.
