What's cookin', good lookin'? Part II

White chocolate and raspberry cake. I tried to do a swirly thing with the raspberry coulis, but it didn’t turn out perfectly. Now it looks kinda unpleasant. 😁

Tastes good, though, and for once the consistency was spot on as well. I probably should have written down the ratios for future reference, because I once again winged it.

My daughters boyfriend is also a farmer and he brought us fresh pork chops. These were the best goddam pork chops (on the bone) I’ve ever had in my life. I broiled them in a butter honey garlic sauce.

I made couscous and some sautéed veggies. Fine meal, if I do say so myself.
 
My wife goes into the office once a week so I use that day to shop for and make a nice fish dinner for her. Nothing fancy but she loves it.
 
We had a bonfire last night (perfect weather) and I made a sausage, onions and peppers on good good sub rolls.

Today I didn’t cook, but took my daughter and her boyfriend out to a soccer game. We went to an excellent Portuguese restaurant in the Ironbound section of Newark. Was excellent, we all shared pallella, grilled pork chops and chicken Marsala.

Fine meal!
 
I have been making salted salmon in bulk and freezing it to use in onigiri and things like ochazuke. Pictured below is sake ochazuke which is salted salmon over rice with green tea (or your favorite tea or dashi broth) with strips of nori. There’s variations of this with pickled plum and other toppings. I really like this simple meal, it’s very comforting and is light on the stomach.

It’s kind of a two part process. The salmon has to be salted and made firm then broiled. That is why I make the salted salmon in bulk and freeze the cooked product for use later in things like ochazuke. There are some easy packets that can be used like this:

Basically sprinkle over rice and add hot water. :) making it from scratch is fairly simple if you have everything on hand already.
 
My mother wants dressing, so I'm making ham, dressing, sweet potatoes, corn, black-eyed peas, mixed greens, and squash tonight. The dressing is already in the oven, and the peas and squash are already cooking because we have something to do this afternoon, and I know we'll be too hungry when we get back to wait for it all to cook, lol. I'm also gonna make a red velvet cake for dessert with pecans in the icing.
