Made shrimp etouffee for dinner last night, was reliably delicious - it doesn't have to take very long if you don't have time to simmer the etouffee for hours. I found myself hankering for dessert after, so I made toast with ricotta, brown sugar and strawberry jam. So delicious. Tonight I have tofu that I have to use up, and pasta, and kale. SO and I took the month of May for "meatless May" and I'm counting down the days until I can cook with pork again. It wasn't *bad*, just monotonous and a little boring.
