What's cookin', good lookin'? Part II

Made shrimp etouffee for dinner last night, was reliably delicious - it doesn't have to take very long if you don't have time to simmer the etouffee for hours. I found myself hankering for dessert after, so I made toast with ricotta, brown sugar and strawberry jam. So delicious. Tonight I have tofu that I have to use up, and pasta, and kale. SO and I took the month of May for "meatless May" and I'm counting down the days until I can cook with pork again. It wasn't *bad*, just monotonous and a little boring.
 
I made a test batch of salmon ceviche on avocado pure for the weekend. It's gonna be one of the starters. People coming over and what not, big cooking happening.

Needs more crunch, but otherwise it was really good. I'm thinking radish.

Yes, I concur, I want to know too. Besides I already offered a low carb option above, so I balanced out CnC's carb galore. :)

Edit: And this is what we had today. Salad with salmon ceviche and avocado puree. I used quick pickled cucumber as well as fresh in the salad and the pickle was really yummy with the fish. I think I'll use that for the extra crunch in my ceviche starter on Saturday, too. Although radish would add nice color. Hmm.

I've decided to use the last on my peanut butter on banana, chocolate and PB ice cream.

Here's hoping it'll suck, so that I won't be tempted to buy another jar of PB.

We top vanilla ice cream with chocolate sauce and peanut butter *all* the time.
But then again we buy PB by the case.

I just bought PB at Sam's :D
Anybody familiar with Sam's knows you can't buy small amounts of anything there...
I use it for PB&J sandwiches, and peanut butter and chocolate chip cookies. I also like it on pretzels or celery. The non organic stuff is not good nutrition, I know :( But it's tasty :D

Yes, I'm afraid I will be disappointed. :p

I just made it an put it to freeze, so that I can have a dessert with my lunch. It was too good. Dammit!
 
As luck would have it, the last thing I made with the PB was definitely the best and now I'm slightly tempted to buy more. Maybe just a tiny jar, so that I won't be stuck with a ton of it again. Although I don't think they sell it in small jars.
 
At least you didn't use any of that Icecream you made to make a simple shake of peanut butter and banana. It sounds so simple and almost healthily boring, but it's so good.


Do you have something in which you good whizz or grind nuts as you wanted them? Have you tried other nut butters?

I've had almond butter, but I think I'm just not a very nut buttery person.

Tonight's dinner was tofu salad (lettuce, cucumber, tomato topped with crumbled tofu and ponzu dressing) miso soup with shiitake, rice and kimchi.

They both look amazing! I really need to find a way to eat your food. I love it how much care you seem to put into everything you cook and plate, whereas I'm a very haphazard cook. :)

It was a bits and bobs night for me. I made a casserole bake of a few small potatoes, a carrot, a golden beet, small bits of cheeses (Fontina, queso iberico, parm, white cheddar, American and a bit of Philly cream cheese that was so dry I had to slice it :eek:), some homemade stock and some panko on top, all baked in a Le Creuset I had "buttered" with bacon grease. I would have been happy with just that :p but I also had a piece of roasted chicken and a bit of crusty bread, and I added a small salad to lighten it up a bit.

Dessert was vanilla ice cream with a fresh peach butchered over the top of it :D

I could do that every night for a month, easy :heart:
