What's cookin', good lookin'? Part II

( all these many years after discovering the term pork butt, and Boston butt, it still makes me smile, so I am smiling at Collar's butt, despite having no advice)



I was really happy with the way the pork butt sections came out, it must have been Elle's smiling at them :p

I had them over low heat for about 7 hours, then higher heat for an hour, then I moved one section to the oven for about 45 minutes at 275. Some of that section fell apart readily, and I had to chop around 2/3 of it instead of pulling it. It was perfectly tender, though. The rest of it stayed in the smoker, back down at 225 until the fuel ran out. That portion broke down all the way, and I will reheat and pull it tomorrow. Success, I'm happy :)

Here is the one I pulled early, it had a 3/4 inch smoke ring. I was really happy with how it turned out. I guess I'm off my fruit and yoghurt diet for a few days :p

Food pics were asked for, so I'll just dump these here. Needless to say, in the near future there's lots of light and vegetarian food on the menu for us, or at least for me. :)

We went to a nice restaurant one evening and had 5 course menus with excellent and interesting (local) wine pairings, but as my phone was and is a piece of crap, the few pics I took turned out all poo. The food was good, even if a bit unsurprising, but the wines really made it for us.

Did you have a favourite?

Over festive season we had drinks with some people and dropped on to holidays ( poet, if you are reading do you remember I sent you a picture that evening ? ) and they said they weren't interested in food on holidays and said when they vacationed in Venice they ate pizza every day. :eek:. Each to their own, but ....it's part of how I understand a place and people...it's food, it's history....it tells me of the agricultural history, the culture, the trade routes.....

I too know someone who simply treats food as fuel and isn't in the least curious about food when they travel. They'd rather go to a KFC to be sure of what they get than try new things. I'm the complete opposite of that.

As for my favorite, it was no doubt the dinner I cooked with a friend, but there are no pics of that. J might have some, I'll have to ask him to send me his pics. We made strapačky, chicken perkelt and steamed buns. Perkelt isn't usually served with strapačky, but because I love them, we made them instead of the more traditional plain halušky.

Halušky are small potato dumplings (in the savory pic, the middle pic on the bottom row is bryndzové halušky, ie. halušky served with bryndza cheese), strapačky are halušky served with sauerkraut, perkelt is a meat stew.

The savoury looked good too, but those are childhood loves of mine.
Ok, so I still carry a torch for the Esterházy torte. Don't tell anyone.

I can imagine the wine was excellent.
And perkelt I remember as the thing my brother would order because it was always good no matter what kind and he never managed to learn to communicate about the food.:D

Yes, that does sound good. :). I buy feta in little plastic boxes :(, one of the things I miss about urban living, limited choices:(. I could get really decent shanklish in London too...here, nope. You can very vaguely appropriate a shanklish salad with feta, but it's a poor attempt.

We get that kind of feta in a place that mostly caters to owners of balkan or greek restaurants or huge balkan or central European families.

I once bought truckloads of food there and the cashier joked about me being really hungry, because Swedish people never buy that much unless the have a business.
I told her that we were going to be invaded by hordes of family coming to stay for some time.
She expressed housewifely understanding of my woes and then she said, "But you no real Swedish girl, right!".

I'd say they need to be spanked unless they enjoy it. In that case, no spankings!

Yep, your eyes serve you well. I can't resist Esterházy either, nor Dobos. It's a good thing they're not so easy to come by here. :)

The wine was really good, lots of things I'd never associated with that corner of the world before, like heavily volcanic flavors.

I'm not sure I've mentioned here, actually, so maybe you shouldn't remember. :p

I went to Bratislava and Budapest.
 
I'd try it. Having had and loved the recipe Lyrically posted here, a Peanut sauce with tomato in it, the pairing was scrumptious, so I'd be prepared to try it in a simpler form.

I also love nut curries, some of which have tomato in.

I have since looked and seen a few other recipes, some with sugar and salad dressing as well. If you do try it, let us know what you think! :)

Last night I sort of inadvertently made a cherry apple pie. I was just going to make cherry, but the pie plate was bigger than I am used to and the cherry filling (canned) didn't look like enough. I chopped up a couple of apples and added them in, and I liked it. I will most likely do this again at some point. I also put a lattice top on it, which I hadn't done before. Fiddly stuff, lattice.

Your pie sounds lovely! Arm I am not eating bread or nuts..amoung other things ( grumble, grumble) But I will be eating them again. :). Its funny, the smell of G's bread at home is fine, I can cook for the others all the things I am not eating, but....I might commit a hold up for the junk food I do not normally eat such ate my crazy food cravings right now :confused::rolleyes:. Other than that I am really enjoying celery, fennel and radishes, zucchini, and eggplants.

And I am still on my fresh fruit and yoghurt kick. The current mix is fresh pineapple, honeydew, cantaloupe, purple grapes, apple and banana over a bed of plain yoghurt sweetness with honey and topped with granola. I can't get enough! :heart:
 
All this discussion about healthy foods and exquisite dishes and here I am subsisting off of pringles and chocolate like a proper urban couch potato.
 
Your mix sounds HEAVENLY. Are you making the granola? I love making granola, but it often tastes quite 'healthy' even though the ingredients should not justify that! I like it and consider it treat breakfast food! but those used to more sugary cereal find it too serious :eek:. G mixes a muesli mix for him self that is so serious it depresses me! He likes it though:D

I have made granola in the past, but I found bear naked? (I think it's called) and its yummy. I obstinately refuse to read the ingredients list :p
