What shall i have for dinner?

OK! so i personally, don't know about you guys, get stuck on what to eat for dinner sometimes when i'm catering just for myself...so i'm gonna list roughly what is available in the house...and the object is to help me think of something, or tell me to just go buy something...:eek:

And btw, this applies to anyone who wants helpful hints and cant think of what to eat:D

Ok, so i have Milk, cheese, carrots, frozen veg, soup, pasta, rice, onions, chicken burgers, veggie fingers, mince lamb, garlic bread, a bit of salsa and some nachos (but ive had enough of those this week).

I'd saute the onions with the minced lamb and lots of garlic, then serve it on the garlic bread with some stir fried frozen veg, myself.

I'd go with the 'natural' ingredients :D

Mince or finely chop an onion (+ clove garlic optional)
Mix into minced lamb, season to taste with salt, pepper, a few chilli flakes if you have them, and/or dried herbs (Italian blend for preference) If you have egg, break an egg into the mix and blend thoroughly. I like to add a couple of spoonfuls of Parmesan - which you might have, since you have pasta.

Make balls - walnut sized.

Fry in a little oil on a gentle heat, (you want them to cook through rather than burn on the outside)

Carrot Rice
grate a carrot (or two) into the cooking rice about half way through the cooking.

I'd be tempted to grate cheese over the cooked balls and flash it under a hot grill, but that's just me.

The lamb balls taste better next day with a tomato sauce and pasta.

ETA: Don't forget the garlic bread - eat with wine whilst cooking the rest

Make a gratin using the fozen vegetables, milk, cheese and rice. Grill a chicken burger or two and cover it with sauteed onions. Lightly toast your garlic bread, and there you'll have your complete meal; nutritious and delicious.

I was thinking something similar--only I was going to tell her to tear up the garlic bread, soak it in a cup of milk for 30 minutes until very soft, add it to the lamb, chopped carrots and onions and egg (salt, pepper and herbs) and mold the lamb into a loaf. Cook in the oven. Lamb meat loaf. Or, do the same and create lamb balls or lamb burgers to fry up.

Alternately, chop onion and carrots, saute till they soften, mix in lamb, herbs, salt and pepper and fry up in a skillet. Serve over rice that's been briefly tossed in melted butter and steamed up in beef broth, or over pasta that's been tossed with garlic olive oil or butter. Steamed, frozen veggies on the side.
