Do you categorize your spices by the country it's from?

No, there are regional sets which I might keep together...but there are so many things that are universal or are on both sides of the planet...so I go by basic tastes, or how they occur in nature, and then by how familiar I am with them, or often I use them.

sweet
salty
sour
bitter
umami (think savory)

What is your comfort food of the day or of this week that keeps you satisfied?...for the moment...
 
Looking for something new and different? Peel an eggplant. Cut it into French fry shaped pieces, then fry them. It does not take long for them to cook. Pinch of salt, pinch of pepper, and you have a nice side dish that will complement any entrée. Enjoy.
 
Pan seared chicken, marinated in agave barbecue with ancho peppers, and whole garlic cloves, the usual spices. Served with steamed broccoli and brown rice.
