Today's soup comes from the Centennial Bar & Grille, 10352 N. Port Washington Road, Mequon, WI.
Greek Chicken Soup with Feta Cheese
1 small red onion, diced
2 medium carrots, diced
1 red bell pepper, diced
1 teaspoon freshly chopped garlic
1/4 cup olive oil
2 tablespoons white Sambuca liquor
Juice from 1 lemon
2 quarts chicken broth
2 cups shredded, cooked chicken
1/2 teaspoon crushed peppercorns
1/4 teaspoon white pepper
2 dashes hot pepper sauce
1/4 teaspoon celery salt
3 cups washed and chopped fresh spinach
2 cups cooked wild rice
8 to 10 tablespoons crumbled feta cheese for garnish
In 4-quart saucepan, saute onion, carrots, bell pepper and garlic in oil over medium heat until vegetables are tender.
Add Sambuca and lemon juice and saute 5 minutes.
Add broth, chicken, peppercorns, white pepper, hot pepper sauce, celery salt and spinach. Simmer 20 minutes. Add cooked rice. Before serving, sprinkle each serving with about 1 tablespoon cheese. Makes 8 to 10 servings

Do you feel as lousy as I do today? It started last Sunday, when I woke up with aching glands on the right side of my throat. Now it appears to be working it's way into a full-blown case of sinus infection... yuck! So I sit here with my rapidly depleting box of tissues, eating the homemade chicken noodle soup, drinking lots of water with the advil, and swigging the expectorant. But, still, no fever. Should I wait for a fever to go to the doctor?
This crud is affecting my thoughts and my attitude... in other words, I feel like hell. I hope I haven't gotten on anyone's nerves in the past day or two. Lord, I am so ready to be done with this nasty cold.
If anyone else feels the need to rest up, by all means, join me. There are extra beds, blankets, a bottomless pot of Mom's chicken noodle soup, and all the tissues you could possibly utilize in one months time. Bring your family, your friends, your lover or your favorite pet to curl up with too if you like. Just don't pass the germs!
So bring on the hot tea, the get-well cards and the posies... the friends that you come to visit here will surely appreciate them.
Let's trade old fashioned remedies too, your Grandma's poultice just may do the trick for somebody here!
