I love it, too, Neci. I think it's my fav part of the Tday meal.

there could also be a veggie hash. dressing at my house normally involves sausage and diced veggies. if i make dressing, mushrooms will be involved.

Certainly!
It's just a mix of 3/4 of a pan of freshly made cornbread, two loaves of French bread, left out to stale the day before and cubed, sage, about a 1/2 cup of turkey drippings, 2 cups of chicken broth, a cup of cream, a whisked egg, celery and onions that have been quickly browned in a skillet, lots of pepper and a little salt (taste your drippings to see how much salt you'll need) and baked in a really large roasting pan. I dot the top of the dressing with cold butter before I bake it, tent it with foil for the first 50 minutes or so, then take it off to brown.

All of this is just handed down directions from my mom's family so please feel free to play with the measurements.

i need to make dressing. i love dressing, and few know how to do it right.

I'm not sure if I do it right but I know that there are never any cast offs from a huge pan of it, we fight over the leftovers for the next day to eat at breakfast something about warmed crunchy dressing with a pat of butter on it to make a food hangover better.

Yum - Ive never added cream to dressing before. That's worth trying.

Hi sweetheart! I'm officially on vacation now, so I'll be around elsewhere a bit more.

As for the cream it's not that noticeable in the grand scheme of the dressing, just holds the breads together a bit I think. Not really a bread pudding. But I did just grab a loaf of challa for some bread pudding this weekend. Can't wait!

How do you make that? Veggie hash sounds like a good deal.

I know lots of people put sausage in their dressing but I've been a veg for so long that I never think to do that.

just throw whatever veggies you have laying around - cubed - into a frying pan with olive oil, butter and spices. i'll probably go zucchini, squash, onion and garlic. possibly pumpkin. i need to use these pumpkins. a dash of allspice with the squashes.

I'm getting the feeling that you're an excellent cook, my friend. Oven ever had mushrooms in dressing either. Sounds delish.

the baby loves mushrooms, so i put them in everything. sausage and mushrooms. *dies* one year we went to a shiitake mushroom farm in rural arkansas and came home with so many mushrooms they went into every recipe for a year straight.

i love to cook and learned from the best. do you have any big turkey day plans?

That's awesome. Mushrooms tend to be something that kids wrinkle their nose at. It's nice that yours love them. I love mushrooms in eggs.

No big plans this year. I'm still working them out. People in my family and their spouses all seem to be going in different directions this year. How about you?
