That recipe looks solid, thanks!They are pretty good, but they need more tweaking to be higher in protein.
I tried to PM you the recipe, but got told I couldn't, so because I know everyone else cares...
Pumpkin Protein Bars
1/2 c Truvia (I used 6 packets of Stevia)
4 oz jar baby food applesauce (I used 1 container of Motts Healthy Harvest No Sugar Added Granny Smith Applesauce)
2 t ground cinnamon
1 1/2 t ground ginger
1/2 t ground clove
1 t baking powder
1 t baking soda
1/2 t salt (I didn't add)
2 t vanilla
4 large egg whites (I used 2 eggs)
1 can raw pure pumpkin
2 c soy flour (I used 1 c whole wheat and 1 c ancient grain flour)
2 scoops vanilla whey protein
1/2 c milk (I used unsweetened almond milk)
1/2 c chopped walnuts
Preheat oven to 350.
Spray a 9x13 pan with non-stick spray.
Combine first 11 ingredients and mix well.
Add the last 4 ingredients and mix until incorporated.
Spread batter into pan and bake for 30 mins.
Cut into 24 squares when cool.
I baked these in muffin cups so I'd have equal amounts (I don't cut straight).
They aren't very protein heavy...the recipe (made with my substitutions) comes out to: 80 calories each, 4.5 g protein, 10 g carbs and 2.5 g fat.
