what should/should not ever go into a proper chili? what version do yo prefer?

Bi, have you never had a great vegetable chili? Yum, one of my favorites.

I know it's an abomination to true chili-lovers, and I do like meat and bean chili, but only if it's not too too hot. I hate it when the only spice I can taste is the hot.

The only chili that is an abomination is that awful stuff they serve at Skyline Chili. Chili should not be sweet. Ick.

I have tried it, but I don't care for it at all. There are very few beans that I like - which is horrible, being a vegetarian, since legumes are an excellent source of protein. But, I make do.
 
In addition to the regular spices, I add cinnamon and a sprinkle of sugar.
 
Lots of cayenne pepper...

A whole scotch bonnet, and/or habanero pepper
 
what SHOULD go into a proper bowl of chili is a highly personal thing but one of the best bowls i've ever had was made by replacing half the chili powder with old bay. YUM!

what should NEVER go into a bowl of chili? pubes.
 
I once had some chili with pineapple in it..........hideous and icky. Leave the fruit out!
 
Those of you who have read my book group thread know that the group has a couple of vegetarian members, so the last time I made chili, it was a vegetarian chili. It had corn in it, which one of the non-vegetarian members found a bit off-putting.

I prefer spicy chili, but I cut back on the spices out of respect for others' tastes.

I'm not a huge chili fan, but I like corn in it. Then again, I probably fall into the vegitarian category. :)

I also like a variety of beans, sometimes white-meat chicken, and for it not to be too spicy (a little sour cream or cheddar has to be able to cut or extinguish any burn).

I agree that sweet, fruity, beefy (or anything that has the taste/texture of beef like ground turkey or TVP), and too spicy make for a really horrible chili.

I'm going to have to try the half chili powder/half old bay the next time I make chili--sounds great
 
NO BEANS!!! Real chili has no beans in it. Beans were originally on the side as frejoles. Cowboys put beans in chili as a protein additive, but that doesn't mean they're supposed to be there. :rolleyes:

well, you always did strike me as fond of old school... :>

me personally, i do use beans, usually kidney beans but i've been known to use canellinis as well. it makes for a nice texture, i think.

cumin is IMHO absolutely mandatory, just as chili powder is, or a drop or 2 of weapons-grade hot sauce. the merit to a sauce like that is that it increases the general heat level w/out detracting from the flavors.

i've always made chili using ground beef. cubed beef though, huh? i might need to try that.

i used to add diced bell pepper when i was single, but the mrs has an allergy, so i haven't been able to do that since. it added a nice background flavor.

Thou shall not add squirrels or rabbits to chili...(don't ask) :p

Thou shall add beans and nice chunks of mexican stewed tomatoes! :)
