I need a quick good chicken soup recipe....something tried and true....

I have no stock but I do have boullion cubes and frozen chicken breasts and rice and frozen veggies.....


now how do I mix them all together to make a yummy make me feel better soup?
 
You've got the basics there, honey. Just don't over-do with the boullion cubes - they can be very salty.


Do the chicken breasts still have the rib bones??? That can make your "stock" a little tastier.

nope boneless skinless chicken is all I have:(
 
Mix the bullion according to the package. You're not going to get much flavor from the breasts, so you'll need to add other seasonings.

A little fresh garlic, some cracked pepper (I buy restaurant grade, because it's got more flavor than regular), don't add any salt, because the bullion is salty.

Instead of soup, you could make the bullion broth, use that as your water for your rice, chop up the chicken, saute it in some butter til it's white, mix it in with the rice and veggies, top it with grated cheese and stick it in the oven til the cheese starts to brown around the edges. Instant "Oh god, I worked so hard at this' dinner. :D
 
yeah, I've tried to make chicken soup with boneless breast, it just doesnt taste as good. You need the bones to make for a decent stock.

When I need to make a fast chicken soup, I go to the local supermarket and buy one of those already cooked and heated roasted chickens that working mom's can pick up and take home and serve right to her family. I slice off alot of the meat (using it for chicken salad or something) and throw the carcass in a soup pot full of water for a few hours with lemon, salt ,pepper, garlic, and a couple of bay leaves.

After a couple of hours, I add carrots, celery and parsley, let simmer for another couple of hours, then add noodles or rice. Once those are cooked through, it's usually ready for eating.
 
That's ok, though. Just use some other seasonings to "beef" it up.

Celery salt
Poultry seasoning
Onions - green onions if you have them, if not, dried will do
Pepper - black, white or the red pepper flakes are good, too and pretty
Cilantro - if you like it or Dill, but not both

OR, if you like, just use some sort of Italian Seasoning - that would be good.

You could also add canned tomato soup to it, if you like that sort of thing. With the Italian Seasonings, you'll get a whole different type of soup. Add noodles instead of rice and it's different again!

Top with grated cheese and maybe some croutons....YUM!

I forgot to add that those already cooked chickens are usually about $5 or $6.
 
So, I decided to take Pipers idea for soup. I showered and got in my car all intent upon bringing my sick self to the store....there was mad traffic, and I was stuck in front of Boston Chicken and I thought to myself...hmmmm they have soup....

So I bought a big ol tub of soup!

Much easier then making my own:p
