i'm craving artichokes

Does anyone know how to cook artichokes? I have 2 and I haven't a clue.

why skin them? my uncle used to make them where you take a peel, dunk it in mayo, and slide it between your top and bottom teeth and scoop the stuff off.. YUM.
 
Ok..
step 1.
Press the pointed end into a flat service and push it, rocking it a bit to open it up a little.
2. Cut the artichoke about 1/2" above the stem.
3. Peel off the leaves on the bottom row. Which would be like 4 leaves total.
4. Wash thoroughly but be sure not to catch the end of the leaves because that can be painful.
5. Boil water
6. Place artichokes in boiling water and let them cook for about 40 minutes. If a fork goes into the bottom of the artichoke with ease it's done.
7. Remove from pan of water and let it drain.
8. Enjoy!
 
Beets, baby, beets... they'll make you immortal... but, if you insist on artichokes:

Prepare a boiling pot with approx. 1 and 1/2 cups water.

First trim the chokes. Cut off the stalk, right to the bottom of the bulb part.
Now cut off the top thistle ends. About one-fourth to one-third down from the top.

Open in the flower, spread the leaves out.

Next place the choke in the boiling water, cover with lid, reduce heat to simmer, and steam for 30 to 40 minutes (depending on size) -- they are done when the leaves pull away easily.

Add to this pot salt and pepper to taste, (and some herbs, dill and basil are good, and other peppers, cayenne, white pepper, or pasilla - to taste, I always add basil and cayenne) lemon and garlic.

(Optional: Here you can stick pieces of fresh garlic in the leaves, or pour garlic power over the whole choke.)

Drain and Cool. (can be refrigerated after cooled down).

Best flavor when eaten cold.
 
To Cook Artichokes:
Trim stems so artichokes stand upright. Cut 1/4 to 1/3 off top of artichokes. Stand prepared artichokes in deep saucepan or pot with 3 inches boiling salted water. If desired, oil, lemon juice and seasonings can be added to cooking water. Cover and boil gently 25 to 40 minutes, depending on size, or until petal near center pulls out easily. Stand artichokes upside down to drain.
