I couldn't find a locking nut either so I settled for a tube of Loctite, the red kind. I paid for it.

Next time just thread the nut on, then take a screwdriver and hammer, and smack one of the exposed bolt threads to mis-align it. The nut won't come off without a bit of force then.

You can always drill a small hole thru the nut and bolt, and insert a smaller nut/bolt, to hold things in place.
