How do you think of AH? A community, or a place to talk only abut authorish topics?

I don't agree with that.
No one here is purely a pantser or purely a plotter. We are all a combination of those two, in varying amounts. And from what I've seen here, most experienced authors can articulate their process very well when they want to. They just don't want to do it, with some rare exceptions.

Well, as usual my statement is the oversimplification that is inherent in this medium.
No one is completely a pantser is undoubtedly true, but it doesn't make it any less true that most pantsers can't explain why they wrote something because it's mostly what came to mind at the time.
That's not in any way a criticism, write with whatever method works for you.

I think it's clear the moderators don't want us talking about moderation - that's been a theme in every bulletin board system I've been involved with since the creation of the internet.

I consider AH to be a place for authors to talk about writing and writing adjacent subjects.

And Star Wars, Stephen King and Lord of the Rings.
