Mine are:

Jeff Buckley's cover of Leonard Cohen's "Hallelujah" and Bob Dylan's "Farewell Angelina".

Ugly Kid Joe's cover of Harry Chapin's "The Cat's in the Cradle".

Bush's cover of Joy Division's "In a Lonely Place".

Hendrix's cover of Dylan's "All Along the Watchtower".

Nirvana's cover of David Bowie's "The Man Who Sold the World" and Leadbelly's "Where Did You Sleep Last Night?".
 
I second the hendrix and nirvana ones, haven't heard the rest though

I really like johnny cash's version of "hurt" myself and "faith" from limp bizkit is the only song i like from them
 
Any cover song is good when compared to that blasphemous cover that Metallica did of 'Turn the Page.'
How do they live with themselves?

That said, I like Van Halens 'Pretty Woman.'

I didn't like Metallica's cover of "Turn the Page" (because I hate the original Bob Seger version - I really don't like that song), but their version of "Whiskey in the Jar" was pretty good.

ever hear of "me first and the gimme gimme's"? it's a collection of punk guys who do nothing but cover songs, I'm not a punk fan but i like them.

Me First rocks. I have all their albums, I have to say one of my favourites is when they covered the showtunes.
 
friend of mine has all of them i think, she knows i don't like punk music but she played them for me one time and I liked it, i bug her to put the cd's on all the time lol
 
The ultimate cover was of Dueling Banjos done by a couple of tuba players, entitled, Dueling Tubas.

The Smashing Pumpkins version was excellent, but I thought the Dixie Chicks was too...perfect. I dont know how else to explain it, it didn't have the soul Stevie Nicks put into it.
 
Joe Cocker's version of the Beatles' "With a Little Help from My Friends." Probably the only cover of a Beatles tune better than the original, but anything Cocker covers is usually better than the original.

Tom Waits' cover of "Somewhere" (Bernstein/Sondheim) from West Side Story.
 
I also love Clash's cover of 'I Fought the Law' and Dim's Rebellion's cover of Motorhead's '1916'.
