Dear Diary,
I broke down and had pizza for dinner last night after not having had wheat in my diet since the beginning of February. The effects were scary.
I swelled up like a balloon, my joints all are stiff and swollen. My body temperature shot up with a fever and my skin itches. I am having the difficulty breathing as my airways are constricted due to allergic reaction but that isn't the scary part. When I woke up earlier today I was deeply depressed to the point where I'd say I was crazy. My emotions were out of control and I was having suicidal thoughts, manic depression and mood swings from hell.
I'm over the worst of that but it lasted for quite a while.
Sooo, to answer the question permanently as to whether I have a gluten intolerance vs. a gluten allergy I would say that I have the more severe allergic reaction.
This is called anaphylaxis and it can quickly be fatal. If your airway constricts just a tad more (it's *not* a highway - just a little back road, ya know!), you can literally suffocate to death within minutes. Some people also have a reaction that causes them to pass out at the same time they start having trouble breathing, which offers them no opportunity to call 9-1-1 or for other help.
Please be very careful about gluten. It's obvious that it's not for you any more.
You're absolutely right. "Intolerance" is actually a mild allergic response - YOU don't have that. You have a severe allergy to gluten, and need to eliminate it entirely from your intake. Check with your doctor - it might also be a good idea to have some epi-pens available in various places around your home and other frequent surroundings just in case you accidentally ingest some gluten... and *always* have one with you if you're going to eat at someone else's home or away from your own home. Gluten appears in an astonishingly wide range of foodstuffs.
What he said. And
