Black bean traditionalist tamales vs. white cheese revisionist tamales

You are 100% completely wrong. Monterey is relatively new and a American "whitewash" thing.

As cheeses go it's kind of new. 1700's anyway. I would assume tamales predate it but even if they do I think the cheese was invented by Mexicans so if they used it in tamales it would probably be considered traditional.

The Aztecs made them as a traveling food using all types of meats and all types of beans depending on the region. Some even used banana leaves rather than corn. The only thing completely common is none of them used cheese...

An early form isn't always considered to be the traditional form with things.

Google traditionally tamales recipes and tell me if they have cheese. I bet I know the answer...

Even today a majority of Mexicans do not use cheese and most would certainly not consider it traditional.

I'm glad you can google. I have no idea what is or isn't right with a tamale. Don't think I've ever had one and don't have plans to. I was just saying that early forms aren't always considered "traditional."

no. i am not.

originally made by franciscan friars in monterey, now CA, the city was a part of Mexico, before it was aa part of the US. mild white melting cheeses also include queso oaxaca, requeson, queso de chihuahua.

the recipes i learned were generational recipes passed down. they include cheese. one is actually wrapped in bamboo leaf, not a corn husk. you're making yourself look like a dick head, just so you know. just because a majority of mexicans do not use one recipe, does not mean it's not a traditional regional recipe. as you should know, mexico has many different states with different types of food coming out of each region.

google traditional tamale recipes? you really are an idiot.

you know all those abuelitas putting their recipes on the internets! the majority of those abuelitas don't even have phones in their homes, much less an internet hook up.

In my defense, in general, I am a dick.

But sorry, I did not realize you were talking about a traditional recipe for a family rather than Mexico in general.

i know you are. :p

you do realize saying mexico in general is like saying the united states of america in general. look at pizza. chicago says one thing and new york says another. saying one kind of tamale (the google tamale) is traditional while another is not is an over generalization that will get you into trouble. the pepper cheese tamales are found in various states. the queso fresco tamales, wrapped in bamboo leaves are unique to very a small area. every state has different "traditional" tamales, the way each state has different traditional moles.

Wha????? I thought they all had Instagram accounts now. Who is posting pics of all this food that everyone on social media is complaining about if it's not the abuelitas?

Next up you will tell me Olive Garden isn't authentic Italian.

Actually, next she will tell you it is.

Or worse. That Texas has real BBQ...

As for the whole internet argument I know you know that's stupid. Pretty sure the Hawaiians that made traditional roast pigs didn't put their recipe on the internet. And yet it can still be found.....

I do either.

Right now I was trying to find a copy of the Declaration of Independence online, but that was pretty stupid of me as those fuckers didn't even have the internet yet.

Then I was going to try to find a original copy Plato online but my fucking server does not have Latin....

white cheese is found in traditional mexican tamales.

tamales de rajas con queso uses a small piece of monterey cheese and peppers as a filling. i've also had tamales made by mixing the masa with loads of queso fresco. these recipes and tamales came from people who spoke no english and were born in mexico. the recipes were passed down through generations. black beans tamales, however, i consider to be whitewashed tamales.

Sound tasty, but I have never seen it that way. the Sonoran Desert extends up to about 3,000 feet elevation in Arizona and New Mexico and at one point, of course there was no border. Arizona was pretty inhospitable so even our Casino Mexico origin Indians really haven't been on their land until maybe a hundred and fifty years ago. The Mexican-Ameicans on the New Mexico side of the border which was much more livable live a little closer to what it was like before there was a border, so I think of New Mexico Cuisine is kind of a time capsule for older Mexican Cuisine.

The Sonoran cooking in Arizona is not that much different from the Sonoran cooking across the border in actual Mexico these days.

No banana leaves in Sonora most of that I assume must be over towards the Yucatan Peninsula. I did eat native when I was in Cancun and it was quite delicious and completely different than any Mexican food I've ever had.

One of my brothers is quite fluent in Spanish and spent quite a bit of time in Mexico City and his description of food there is nothing like what I would recognize either but I haven't tasted any of it.

When I was young I had a Costa Rican girlfriend but because the family shopped in Mexican stores everything they served was very familiar to me as Sonoran Mexican cooking.

I would be very interested in trying some of these tamale with cheese recipes if you have a chance maybe you could post some in the food thread sometime?

Do people really not know what white cheese is? Have they never had a pizza?

When I read the OP my confusion was ....

Did they replace black beans with white cheese. I have eaten a ton of Tex-Mex style food (Americanized Mexican). From what I have seen on TV food shows I doubt I have ever had traditional Mexican food.

Most people outside of Mexico haven't had real Mexican food. Same as any other ethnic or regional food. I have never been to China but if I ever get there I'm pretty sure I'll be disappointed in their lack of General Tso's and House Lo Mein.

You need to go to the city of Chung King and order the chow mein. Their soy sauce is world renown. :D ;)
