Coppola Malbec. I know, but it was under ten. I may start buying two buck chuck, seriously. I am on a budget tear, and I think alcohol needs to get the axe. I typically spend about ten bucks or so on a bottle, and buy a couple of bottles a week (that I share with Mister Man, so pbbbt!).

Hey, that's twenty bucks I could be spending on a pot roast. That's right, people, I am now reading all of those websites from moms who make, like, casseroles and shit. I'm going to become a real American, like Sarah Palin talks about, starting in my kitchen. No more elitist goat cheese. Or, sniff, sniff, truffle oil. We had mushroom quesadillas tonight. I'm totally low rent now, bitches.

You won't like two buck chuck, trust me. A good pot roast, on the other hand, is a thing of beauty. However, while you're at TJ's, check out their near-generic beer. It's quite good.

Seriously killer pot roast -

1 pot roast
1 envelope liptons french onion soup
1 can cream of mushroom soup
1 crockpot

Quickly sear the roast in a frying pan, transfer to the crock pot. Mix the soups together, smother over roast. Set on low for 8 - 10 hours (or high for 4-ish if you're rushed). Remove roast from crock pot, slice thin, serve with onion/mushroom gravy from the crock pot, caramelized veggies & whole wheat dinner rolls.

Carmalized veggies -

new/baby potatoes (unpeeled)
carrots
onions (sweet vadalia are best)
parsnips
sweet potatoes
etc, etc
olive oil
fresh ground sea salt/pepper

Scrub & rough chop all root veggies into uniform size; quarter onion and separate into chunks. Drizzle all with a healthy splash of olive oil, sprinkle with fresh ground sea salt/cracked pepper. Place in one layer in a low edged roasting pan, roast for 45 minutes or so - I usually do them @ 350 - 400 - stirring/shaking every 15 minutes or so to turn things.

If you get the pot roast going and do the veggie prep before going to work, all you have to do is move the pan of vegetables from the 'frige to oven, set the table, warm the rolls, slice the roast, check email, and dinner's ready. :)

Confession. I don't even know what a pot roast is! I swear my mother never made one. I was raised on pesto salad and gnocchi! Kidding. Not really. Is it pork? Is it beef? And OMG then you cook it with a can of soup? Dude. I have never made a recipe with a can of soup. I'm freaking out over the possibilities. I do own a slow cooker. Ok, I will do it. It's cheap, right? I mean, affordable, budget-friendly, etc.

Organic refried in a can. Mission tortillas. Fresh cilantro. Pace hot. Crystal Farms cheddar (cheap block.) Poverty isn't THAT bad all of a sudden. You'll lay out about 15 bucks, but eat for a week.

Use your slow cooker.

It's beef. It's commonly a shoulder steak. You can do a lot of things with it, but do 'em slowly and at low heat for a long time.

CM's roast veggies are stars in their own right. I've gotten addicted to parchment paper for that purpose, it's super easy cleanup.

My secret of late is found in the Indian grocery - it's an amazing all-purpose thing that you can put into Mexican, pseudo mexican, and anything on earth that needs a cilantro/hot kick and you're out of cilantro. Cilantro chutney - the green jar 'o stuff. I've mixed it with the brown stuff (tamarind chutney) some water, vinegar, and molasses and put it over pork ribs in the slow cooker for 8 hours. Om nom nom.

Mild hijack: does anyone know why fresh basil seems to be less available these days? My spaghetti sauce recipe calls for a bunch of fresh and I had to go to three grocery stores before I found any.

Hey, I'm kicking around thoughts of a Masters. Drinking seems integral to this process.
 
I am totally in budget food mode now.

However I am also, finally, reading The Omnivores Dilemma. Which is really depressing.

So CM, skip the Lipton's Onion Soup mix please. Just place that roast on a bed of coarsely chopped veggies, lay a couple of slices of bacon on top and cook as normal. (Don't diss the bacon, please.) My gravy recipe will follow tomorrow.

The meat is one thing (I can at least rationalize it, anyway), it is the awful shit that we are putting into our bodies every time we use an ingredient manufactured by a company.

As I stare at my shelf of what I thought were "healthy cereals."

But I am still drinking wine. (Drawing the line at 2 buck chuck, actually I think its 3 buck chuck now.) I'll give up something else first.

I still see it here, and mine still has some leaves, but dude the weather changed.

Now that I've been turned on to good tomatoes, btw, it is just sad to eat them out of season. Booh. Hoo.
