I love chocolate cakes with uncommon ingredients that still taste great. Potato chocolate cake? Courgette? Delicious. Mayo cake? So good!

Why not? It's eggs, oil, vinegar, it makes sense when you get around the initial 'what?!' reaction. Genuinely it's a great cake.
